Nothing says summer like the blooms on my strawberry plants here in Ohio.  When they ripen in late May-early June they are the sweetest berries you’ve ever tasted.  I also enjoy berries in late February from my dome garden here in NW Ohio. There are a few varieties I know I can trust a harvest from. These sweet treats are easy to make and perfect for your next summer gathering, picnic, or date night.

Strawberry Shortcake Pancake Recipe

 

Strawberry Shortcake Recipe for Breakfast

This is a super sweet treat for breakfast so be prepared to be energized!  I recommend serving this up on a summer day after picking fresh berries.  You will also want to check out my whip cream recipes to dish up on top.  Don’t forget if you are in a hurry you can cheat and use boxed pancake mix. 

Ingredients

Strawberry Topping
  • 1 pint of fresh straberries
  • 1/2 teaspoon vanilla
  • 1/3 cup of sugar
Pancake Mix
  • 1 1/2 cups of flour
  • 3 1/2 teaspoons of baking soda
  • 1 teaspoon salt
  • 1 tablespoon of sugar
  • 1 1/4 cup of milk
  • 1 egg
  • 3 tablespoons of butter

Instructions

Strawberry Topping
  1. remove top of strawberry (greens)
  2. dice the strawberry into small peices
  3. Mix with vanilla and sugar.
  4. Refrigerate until ready to use. Will keep in refrigerator for up to a week.
Pancakes
  1. Toss together the flour, baking powder, salt and sugar.
  2. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  3. Heat up griddle
  4. Once the griddle or skillet is hot scoop roughly 1/4 cup of batter
  5. Watch for little bubbles indicating it is time to flip the pancake.
  6. Brown both sides and serve immediately!
  7. top with strawberry topping and whipping cream
  8. sprinkle crushed walnuts on top

This is a recipe I’ve been using for years from fresh homegrown strawberries in my home kitchen!

  • The American Indians would crush berries and mix it with cornmeal and bake them into bread long before the colonists arrived.  The Colonists developed their own version of the recipe that was later known as Strawberry Shortcake.
