I think what I love most about the pasta I use in this salad is it really soaks up the flavors quickly.  Most other pasta salads I have made with dressings need to sit overnight.  NOT the Casarecce Pasta!  I share more about that noodle below the video and images.  Check out this video and tell me what you think about this recipe.  Be sure to use the print option included below

This recipe was created by me using what I had on hand one summer afternoon.  I’ve been experimenting with this Casarecce Pasta I found at Aldi.  You will find more recipes as soon as I can get them posted so keep an eye on my Casarecce Pasta tags on this website.

I found mine at Aldi in the speciality food isle.  I wish I would have stocked up on these because I am having so much fun making new recipes with this fun little noodle.  I’ve got more recipes using this pasta on my website at Casarecce-pasta-recipes.

Cool Summer Casarecce Pasta Salad Recipe

Ingredients

  • 8 oz. cooked Casarecce Pasta

  • 1 cup of cucumbers (diced small)

  • 1/2 cup of salami (diced small)

  • 1/3 cup of chopped small provolone cheese

  • 1/2 cup of Kalamata Olives (cut in 1/2)

  • 1/4 cup chopped green onions (sweet red maybe substituted)

  • 1/2 cup of Garlic Vinaigrette Dressing

Directions

  • Prepare the pasta as directed on the package. Be careful to not over cook the pasta because it will be mushy. I use my Pressure Cooker to prepare noodles in the summer.

  • While pasta is cooking chop up all the ingredients as directed above.

  • Add the prepared cool pasta to a your favorite mixing bowl

  • Gently add salad dressing and toss 

  • On top of the pasta add the remaining ingredients

  • If needed add a little extra dressing so the salad is not dry.  The dressing will soak into the pasta as it sits.

  • Serve on a bed of your favorite lettuce to make as a meal.
