This has got to be one of my all time favorite recipes to whip up during the summer months.  In this post I share my watermelon salad recipe.

This video is just as quick as it is to whip this up.  Double the ingredients and take it to your next summer get together or enjoy a bowl for yourself.  I just love the feta in this recipe.  The rice vinegar really makes the watermelon pop!  Click below to watch the short video:

Watermelon Salad Recipe

All you need for this recipe is a few sprigs from a fresh mint plant,  watermelon, feta cheese, rice vinegar, and cucumber.  I’ve put together a printable card below so you can add this to your collection of recipes.  As always be sure to reach out to me if you are not sure how to use this option.

Watermelon Salad Recipe

Ingredients

  • 3 c. cubed seedless watermelon

  • 1 c. medium cucumber, chopped

  • 1 c. crumbled feta

  • 1/2 c. red onion, thinly sliced

  • 1/2 c. coarsely chopped mint

  • 1/4 cup of rice vinegar

  • Flaky sea salt, for garnish (optional)

Instructions

  1. In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint.

  2. Pour over vinegar before tossing gently.

  3. Garnish with more mint and flaky sea salt.

The watermelon we purchased along the side of a country road in Indiana inspired me to whip this up today.

It’s been years since I grew my own watermelon.  Each year I do consider starting some seeds to grow my own but they are just so easy to purchase locally during a grocery store trip.   My husband and I happen to be coming home from Indiana and saw this roadside stand.  It was purchase using the honor system so we had to guess what we would pay this home gardener.  What would you pay for a roadside watermelon?

It started to down pour just as we approached the stand.  My husband was kind enough to jump out and pick a watermelon.  He did a great job!
