In this post, I share a spin-off of my famous Aunt Mary Pasta Salad. I call my Italian Cucumber, Tomato, and Pasta Summer Salad.  This is going to be the new hit at family and friends get together this summer.

Italian Cucumber, Tomato and Pasta Summer Salad

I’ve been experimenting with the new pasta style I found at Aldi this past summer.  I’ve made a hot dish and two cold pasta salads so far.   So much fun experimenting with flavors and textures with this fun Sicilian style pasta.   The pasta is perfect for this ‘redo’ of my famous Aunt Mary Pasta Salad because you don’t have to soak the pasta in onion and dressing for any length of time to get that amazing blend of flavor.  I hope you will click on the recipe card below and give it a try.  Let me know what you think by commenting on my website or tag me on social media @brenhaas when you share a photo of it after you make it!

Italian Pasta Cold Dish for Picnic

This is a recipe that is going to be a new favorite.  I use the casarecce pasta which is perfect because it soaks in all the amazing dressing flavors.  Below is the printable recipe so be sure to take advantage of that.  I hope you will comment on my post and let me know what you think.  Find more casarecce pasta dishes on my site.

The really awesome thing about this salad is how the dressing absorbs into the pasta PERFECT!!!

Italian Cucumber, Tomato and Pasta Summer Salad

Ingredients

  • 8 oz of prepared casarecce pasta
  • 6 oz of your favorite Italian salad dressing
  • 1 large cucumber sliced into bite size pieces
  • 1 large tomato (about 1/2 cup ) diced
  • 1 small sweet onion (about 1/3 cup)
  • 2 tablespoons of Mrs. McCormick Salad Pasta Seasoning
  • 2 tablespoons of grated Parmesan cheese

Instructions

  1. prepare the pasta and let cool
  2. chop up the vegetables into bite size pieces
  3. mix diced onion in with the pasta and gently stir in dressing
  4. sprinkle evenly on to the pasta mix the seasonings and cheese
  5. toss in chopped cucumbers and tomatoes just before serving
