Black Beans, Chicken and Tomato Recipe in 30 Minutes with Pressure Cooker

While the chicken and chrizo are browning up in the pressure cooker be sure to start your rice on the side.  This dish has a 30 minute cook time without having to soak the dried black beans over night. In this recipe I use my remaining peppers from the garden.  Be sure to take advantage of the print option on this recipe page.

Ingredients

  • 1 pound of chicken breast
  • 1 pound of Charizo
  • 1 pound of black beans dried
  • 1 medium onion
  • 1/3 cup of cilantro
  • 1 cup of peppers
  • 3 roma tomatoes
  • 2 cloves of garlic
  • 1 tablespoon cumin
  • 1 tablespoon of salt
  • 1/2 tablespoon of corriander spice
  • Ground Fresh Pepper to taste.
  • 4 cups of vegetable brooth
  • * Rice

Instructions

  1. In Power Pressure cooker XL saute chicken and chroizo.
  2. Dice up veggies and garlic
  3. Remove meat from the pressure cooker pot and add onions - garlic to saute.
  4. Once sauteed put meat back in pot, add chopped veggies and spices.
  5. Pour dried beans over the top of the mix before adding the 4 cups of broth.
  6. Click on pressure cooker menu to cook 30 minutes on Bean / Lentil setting.
  7. FOLLOW DIRECTIONS on how to use the pressure cooker in the appliance paper work.
  8. Serve immediately with rice and favorite toppings.

Watch the steam come out of the easy to close pressure cooker.  When I put the lid on I have to double check because it is just TOO EASY! The black beans come out of the pressure cooker perfect.  I never imagined having amazing black bean recipe without soaking the beans over night. You’ve got to see this to believe it!
