In this post I share my tasty Taco Soup Recipe that is perfect for Taco Tuesday.  Printable recipe card and preparation tips in this post.

Taco Soup Recipe

It’s just not Tuesday without a Taco!  I came up with this rendition of a simple taco soup after craving my favorite meal.  Most of the ingredients for this recipe are normally in my pantry.   To make this soup perfect you will need the following:

Taco Tuesday Soup Style
Loaded with Fresh Vegetables

Ingredients:

  • olive oil
  • ground beef
  • sweet onion chopped
  • minced garlic
  • jalapeno
  • diced tomatoes with green chiles (canned)
  • beef broth
  • tomato sauce
  • cumin
  • paprika
  • dried oregano
  • dry ranch dressing mix 
  • corn
  • black beans
  • cannellini beans
  • sour cream
  • red onion
  • avocado
  • corn chips
  • black olives

The last few ingredients are used for toppings.  Don’t be afraid to get creative and use what you love on your home made tacos. If you don’t like jalapeno you can use a bell pepper or  The complete directions and measurements are below.

I was actually surprised the first time I made this and my husband went back for seconds.  He isn’t a big Taco salad guy and prefers to have a plain taco.  I think what really made this soup different was the beef broth and taco zip!  Be sure to make note of what your family likes about this soup so you can use it in additional recipes. Ingredients

  • 1 pound ground beef

  • 1 medium (about 1/2 cup) sweet onion diced

  • 1 clove of garlic minced

  • 1 fresh jalapeno sliced (about 1/4 cup)

  • 2 (14.5 oz.) cans diced tomatoes

  • 1 (14 oz.) can beef broth

  • 1 (8 oz.) can tomato sauce

  • 2 teaspoons ground cumin

  • 1 Tablespoon dry ranch dressing mix

  • salt and pepper to taste

  • 1 1/2 cups frozen corn

  • 1 (14.5 oz.) can black beans, drained and rinsed

  • 1 (14.5 oz.) can cannellini beans, drained and rinsed

  • Toppings
  • Sour Cream

  • jalapeno slices

  • corn chips

  • fresh cilantro 

Directions

  • Have all ingredients chopped, drained and ready to go before heating skillet to cook up hamburger.

  • In favorite skillet, dutch oven or electric pressure cooker heat up to fry hamburger.

  • Once hamburger is fried up move to one side of pan and saute onion and garlic.

  • Slowly add all other ingredients bringing to boil on medium heat.

  • Stir as needed to not burn to bottom of pot – cook about 15 minutes or until pepper is at ideal softness.

  • Lower heat and let soup simmer for about 10 minutes before serving.
