Watch the steam come out of the easy-to-close pressure cooker.  When I put the lid on I have to double-check because it is just TOO EASY! The black beans come out of the pressure cooker perfectly.  I never imagined having an amazing black bean recipe without soaking the beans overnight. You’ve got to see this to believe it!

Black Beans, Chicken and Tomato Recipe in 30 Minutes with Pressure Cooker

As you can tell in the image of the meal the black beans turn the chicken to a blackish tint.  It tastes amazing just don’t be surprised!

While the chicken and chorizo are browning up in the pressure cooker be sure to start your rice on the side.  This dish has a 30 minute cook time without having to soak the dried black beans overnight. In this recipe, I use my remaining peppers from the garden.  Be sure to take advantage of the print option on this recipe page.

For this recipe you will need the following ingredients:

  • chicken breast
  • Chorizo
  • dried black beans
  • onion
  • cilantro
  • green peppers
  • tomatoes
  • garlic
  • cumin
  • salt
  • coriander
  • pepper
  • vegetable broth
  • rice

Ingredients:

  • 1 lb Chicken Breast
  • 1 Pound dried black beans
  • 1/2 lb of chrizo
  • 2 cloves of garlic
  • 2 tablespoon olive oil
  • 1 medium onion
  • 1/4 cup of cilantro
  • 3 roma tomatoes
  • 1 tablespoon cumin
  • 1/2 tablespoon cayenne pepper
  • 1/2 tablespoon coriander spice
  • 1 tablespoon sea salt fresh ground black pepper to taste
  • rice and fresh tomatoes, lettuce and cilantro on the side.

Pressure Cooker Italian Meatballs

There are many types of meatballs using different types of meats and spices but this recipe is my favorite! In this post I share a super quick and tasty way to make pressure cooker Italian Meatballs.  Be sure to scan down and check out the details including the printable recipe.  Images and videos on this post to show how easy this recipe really is in the electric pressure cooker. Pressure Cooker Italian Meatballs Recipe This is a traditional recipe with a modern-day spin preparing in the Electric Pressure Cooker. Check out the simple directions below and scroll down on the post for the printable version of the recipe.  Using fresh ingredients or frozen meats works for this recipe.  I prefer using fresh herbs from my garden instead of the dried spices.  For the pasta sauce, you can mix up your own or use store-bought.  For today’s post, I cheated and used one of my favorites (and cheap) sauces from Aldi. Ingredients you will need:  hamburger ground Italian sausage egg olive oil breadcrumbs  parsley Italian seasoning garlic parmesan pasta sauce Details on the ingredients and additional cooking instructions below. Pressure Cooker Italian Meatballs Recipe By Bren Haas Serving: 6 Difficulty: Medium Prep Time: 5 minutes Cook Time: 15 minutes Ingredients 1 lb. ground hamburger 1 lb. ground Italian sausage 1 egg 1 tablespoon olive oil 1 cup breadcrumbs 1 tablespoon dried parsley 1 teaspoon Italian seasoning 1 teaspoon salt 2 cloves garlic 1 cup parmesan 1 jar your favorite pasta sauce Instructions In a large mixing bowl, mix together all ingredients but the spaghetti sauce. (I like to mix with my hands!) With a 1-inch cookie scoop or a spoon, form round meatballs, about 1 inch in diameter. Form a layer of meatballs in the bottom of your pressure cooker and then continue to layer up as long as you have remaining meatballs. Pour pasta sauce over top of the meatballs and lock the lid. Cook on high pressure for 8 minutes with a 10-minute natural release followed by a quick release to let out any remaining pressure. Serve meatballs on top of spaghetti, by themselves, or as meatball sandwiches on toasted hoagie buns with melted mozzarella cheese. Broccoli Cheddar Cheese Soup I think the first time I fell in love with this soup is after enjoying a quick mix version.  The powder package was loaded with sodium and I had to dress it up with extras from the kitchen to make it really pop.  Adding some cheese from the refrigerator got me thinking about how I could make this even better from scratch. Over the years I have even made a yummy white cheddar version using frozen broccoli and ghee.  Below is a quick run down on what ingredients I use in this soup. sweet onion butter milk Velveeta Cheese  fresh cut into florets broccoli celery carrot chicken broth (or mix your own with chicken bouillon) grated cheese Was I right?  I bet you have the ingredients in your kitchen today! More Super Easy Recipes For Most of my recipes I use my Yedi Pressure Cooker like a stock pot for quick clean up.  It is also nice because I can keep it on ‘warm’ setting to enjoy later in the day. Chopper for Easy Clean Up Blend The Broccoli Veggies in Recipe Shred Carrots From The Garden Note that this is titled the BEST EVER broccoli cheese soup.  I gave it this title because the boys empty the pot every time I make this.  I really believe adding fresh ingredients right from the garden like celery and carrots really make this POP!  Interested in the hand held immersion blender? Broccoli Cheese Soup Recipe By Bren Haas Ingredients 3 tablespoons butter 1 medium sweet onion, diced 1 medium carrots, diced 3 cups of chicken stock (I used the powder jar of Chicken bouillon) 2 cups milk 1 teaspoon gourmet mustard (I used ground stone variety or Dijon) 8 ounces (2 cups) freshly-grated white cheddar cheese 4 cups chopped broccoli florets (about 1 large head of broccoli) 1/2 teaspoon freshly ground black pepper to taste Instructions Chop up veggies for sauté ( onion and celery) Sauté the onion and celery on the ‘meat’ setting of the Electric Pressure cooker with olive oil or butter. DO not put the lid on while sauté Toss in carrots and let simmer with sauté mixture After about 2 minutes or until the carrots are getting soft add broccoli that has been cut into small pieces Stir in chicken bouillon water mix to the pot Mustard and seasons that you like are last to be added before closing the lid to go through the SOUP SETTING on the Electric Pressure Cooker. This soup setting is about 10 minutes After the soup cycle is complete go ahead and remove the lid by releasing pressure ( read your machines information on how to properly do this!) Pour in Milk and Cheese, stirring carefully before putting the lid back on so the soup can get hot again. SERVE with additional cheese and sourdough bread Note: Store this soup in the refrigerator for up to 5 days! Open Faced Roast Beef Sandwich Recipe

This recipe is inspired by the Open Roast Beef Sandwich at Blue Ribbon in Wauseon, Ohio n this post, I share how I made the most tender and tasty roast beef for my husband’s favorite Open-Faced Roast Beef Sandwich in an Electric Pressure Cooker.  The recipe is super simple so check out the tips and tricks featuring shortcuts below.  This was super easy to make using my favorite Power Pressure Cooker.  You can do the same recipe in an Instant Pot. Open-Faced Roast Beef Sandwich One of my family’s favorite meals is a hot roast beef with gravy, mash potatoes, and a favorite vegetable on the side.  Today I am whipping this up in my Power Electric Pressure Cooker for my husband’s birthday dinner.  To create this dish you will need the following ingredients. Don’t forget that toward the bottom of this post you will find the details in the printable recipe section. It is really a super simple recipe. I am super amazed at how well this turned out in the Electric Power Pressure Cooker.  My husband says this is the best Open-Faced Roast Beef Sandwich he has ever had.  He compared it to the HUGE portion meal he enjoys at Blue Ribbon Diner out in Swanton Ohio.  Mine tastes like it has less salt mainly because I didn’t use the drippings from the bottom of the pan for the gravy. Serving Suggestions for the Open-Faced Roast Beef Sandwich In the recipe feature here I use an additional package of McCormick brand Brown Gravy Mix.  Just follow the recipe directions to make the gravy.  You can use the drippings in the bottom of the pressure cooker with flour but I like to cheat! Another cheat is I use instant mash potatoes.  It makes it easy to whip up a ‘homecooked meal’ that tastes like you spent hours working on.  I always have the individual varieties of mash potato dried mixes you can find at Aldi for .89 cents.  The ‘loaded potato’ variety  from Walmart is super yummy with steak and this recipe too! You would be silly to not ‘cheat’ these days when putting together an amazing meal.  Using new products like the 4 serving mash potato packages makes whipping up a healthy home-cooked meal so much easier.  You will also have more time to spend with the family. the most tender and tasty roast beef for my husband’s favorite Open-Faced Roast Beef Sandwich in an Electric Pressure Cooker. Pin Print Open Faced Roast Beef Sandwich Recipe Course: MainCuisine: AmericanDifficulty: MediumServings 6 servingsPrep time 15 minutesCooking time 50-55 minutes Ingredients 2-3 pounds of beef roast 3 tablespoons of flour Salt and pepper Small onion chopped 1 clove of garlic ( or 1 teaspoon minced garlic) 2 cups of water Gravy 2 cups beef broth 2 teaspoons garlic powder 1 tablespoon Worcestershire sauce (optional) 1/4 cup cold water 3 tablespoons corn starch salt and pepper to taste Directions Gravy In a skillet bring 2 cups of the beef broth to a boil over medium-high heat. Stir in garlic powder, onion powder, and Worcestershire sauce. In a small bowl whisk together cold water and cornstarch until dissolved. Pour into boiling beef broth and reduce heat to medium-low. Stir until thickened. If the contents are getting too thick add water as needed. Season with salt and pepper if needed. Roast In a shallow bowl that will hold the roast mix flour, salt and pepper. Carefully place the beef roast in the dish and coat all sides with flour mix. In an electric pressure cooker set to saute mode add 2 tablespoons of olive oil. When hot add diced onions and garlic to saute for about 2-3 minutes. Slowly add 2 cups of water. Let simmer for about 3 minutes before adding the roast into the pot. Cook on ‘ Meat’ setting for 1 hour letting the steam release on its own. Do not open at the end of the cooking time.  Be sure to use the settings for roast that your appliance recommends.  All electric pressure cooker are different. After the pressure release the device should be ready to open. Remove beef to shred.  Return to pot with gravy before serving over mash potatoes on a slice of fresh thick sandwich bread. Garnish this sandwich with fresh parsley from the garden! It is best to prepare the beef gravy once the roast is complete. Too Hot For The Meal

Can you believe I’ve got these HOTTIES left in the Dome Garden.  These are the Ghost Peppers I have been growing since April.  These will not be in the meal today but I just wanted to show them off.
