Clean Eating Tuna Salad Recipe

Below are the super simple and very clean ingredients needed to put together this tasty meal.  This is my spin on Tuna Salad using many healthy vegetables and lemon juice for flavor without mayonnaise.  Don’t get me wrong, I love MAYO but sometimes it is good to cut back and eat smart.  This recipe was originally shared on my SparksPeople page in 2004.  The photo on this post is from that old recipe share.

  • 1 can of tuna – in water
  • 2 hard boiled eggs diced
  • 1/2 cup of chopped celery
  • 1/3 cup of sweet chopped onions
  • Romain Lettuce
  • 1 cup of strawberries cut in half
  • 1/3 cup of shredded carrots
  • 1/3 cup of halved grape tomatoes (about 20 little tomatoes)
  • salt and pepper to taste
  • splash of lemon juice

The recipe is super easy to put together and should only take about 15 minutes.  This is the perfect size for a family of 4.  I will include the detail directions and ingredients list on the printable recipe below.

Easy To Make Ground Turkey Lasagna Recipe

In this post I share an easy way to create a somewhat healthy Lasagna using ground turkey.  You will find my secret to make a basic ground turkey into an Italian cuisine. Turkey Lasagna Recipe The best turkey lasagna from my personal notes featuring easy to find ingredients.  Packed with so many delicious layers including a few home grown herbs. It’s rich, flavorful, and exactly what you want in a lasagna. Ingredients 2 Tbsp. olive oil 1 cup chopped sweet onion 2 garlic cloves, minced 1/2 cup of shredded carrot 1/2 cup of sweet peppers chopped and diced 1 pound of turkey sausage 16 oz. Spaghetti Sauce 1/4 cup of fresh parsley 1/4 cup chopped fresh basil 8 oz. ready to bake lasagna noodles 15 oz. ricotta cheese 1 cup grated Parmesan cheese 2 eggs 2 cups mozzarella, shredded How to Cook the Ground Turkey ground turkey saute mix Add Turkey Pepperoni It’s hard to believe when you bite into this filling and super moist dish that ground turkey is involved.  Over the years I have started to prefer poultry in this dish rather than beef.  Not only is the meat mild it is also low in fat.  The secret is adding fresh vegetables to the sauté while preparing the meat.  Letting the flavors marry together by frying up with a table spoon of oil.  As the skillet starts to soak up all the moisture add a dash or two of water or vegetable broth to bring the extra flavors together.  Be sure to scroll down for exact directions below. Spaghetti Sauce 1/4 cup of fresh parsley 1/4 cup chopped fresh basil 8 oz. ready to bake lasagna noodles 15 oz. ricotta cheese 1 cup grated Parmesan cheese 2 eggs 2 cups mozzarella, shredded Instructions Directions Step In favorite skillet sauté onion and garlic in olive oil for about 4-5 minutes Add fresh shredded carrots and diced peppers to the skillet and cook down for an additional 5 minutes. Move vegetable sauté mix to the side of skillet before adding ground turkey to cook down. If too dry add about 1/4 cup of water. Put lid on skillet for about 5 minutes before stirring the meat. Keep the vegetables to one side until all the ground turkey has turned from pink to light brown.   Once the turkey is all brown and not pink mix the vegetables together around in the skillet. Let cook down another 5 minutes adding water if needed. Do not let the bottom of skillet go dry. Set enough marinara of spaghetti sauce aside to coat bottom of casserole dish. In a 9×9 dish this is usually about 1/2 cup of sauce.= Slowly add spaghetti or marinara sauce to the skillet mix. Cook for about 10 minutes bringing to slow simmer. In a mixing bowl add ricotta cheese, 2 beaten eggs, parmesan cheese and herbs. Mix well and set aside for layering process. In 9×9 baking casserole dish add enough pasta sauce to cover the bottom before adding 1st layer of lasagna noodle. Layer onto of dry noodle meat sauce mix. Layer lasagna noodle before adding cheese mix Repeat twice or until you have 5 layers finishing with a thin layer of sauce and mozzarella cheese on top. Ready Set Go Smoothie Recipe Using Flax Seed

Being told an edible seed is healthy for you and actually finding it at your local grocery store is a true blessing.  The next time is figuring out how to add it to your diet or menu plan.  In this blog post, I share a super easy ‘Ready Set Go Smoothie Recipe using flaxseed.  Ready Set Go Smoothie Recipe Video I’ve been throwing a tablespoon of flaxseed and other good ingredients into my smoothies randomly for a few months.  After finally doing some research on how to use flaxseed I felt so much better about this recipe.  In this video, I share my favorite morning smoothie before heading out to my daily workout. Ready Set Go Smoothie Recipe Don’t be afraid to use frozen blueberries if you don’t have fresh on hand. Any high power mixer will do great.   Recipe and Images by Bren Haas Flax Seed in Your Daily Diet Have you noticed more healthy seeds at local grocery stores?  I am a huge fan of this crunchy peanut butter at my local Aldi.  When they stopped carrying it I simply made my own.  I will have to share that recipe at another time. Below are a few facts about Flax Seed Flaxseed has been known to prevent hot flashes according to the Society for Integrative Oncology. The latest research shows that flaxseed can help lower the risk of diabetes, cancer, and heart disease most likely because it is a great source of healthy fat, antioxidants, and fiber. American Society of Clinical Oncology (ASCO) revealed recently discussed that consuming flaxseed can stop prostate cancer tumors from growing. The lead investigator of the study, Dr Wendy Demark-Wahnefried shared at this event that they were excited that this study showed that flaxseed is safe and associated with a protective effect on prostate cancer. Iowa State University’s Nutrition and Wellness Research Center recently found that cholesterol levels lowered among men who included flaxseed in their diet. Lead Author, Suzanne Hendrich shared “people who can’t take something like Lipitor, this could at least give you some of that cholesterol-lowering benefit.” According to a study published in Nutrition Research consuming flaxseed every day will improve your blood sugar.
