My husband and I were HUGE rice fanatics. I serve rice with fish, pork and many other main meals in our home. After discovering some frozen riced cauliflower packages at local grocery stores – dropping a lot of carbs just got super easy! In this video, I share how I whip up this amazing and filling Easy riced Cauliflower stir fry meal.

With a few simple ingredients I recommend you ALWAYS have on hand you can make this low carb and super yum meal. For this recipe, I added 2 eggs, garlic, and fresh green onion to a frozen cauliflower entre from Walmart. You can find riced cauliflower in the freezer department at all the grocery stores in my area. I like and have used the products from Aldi, Kroger, Meijer and Walmart. I noticed Costco has a supersize of the riced cauliflower that I will most likely try on my next visit.
Once the onions and garlic are sautéed I add the frozen package of riced cauliflower stir fry you can find in the Walmart freezer isle.
After about 5 minutes with the lid on the skillet move the veggie mix to one side and add 2 mixed eggs. See the video for tips on how to quickly cook these.
You can serve this as a meal with the eggs and extra ingredients!
