Stuffed Pepper Soup Recipe

Stuffed Pepper Soup Recipe Highlights

Ingredients

  • 1 pounds ground beef
  • 1/2 cup of red onion
  • 3 cups water
  • 14 ounces of tomato sauce
  • 12 ounces of diced tomatoes, undrained
  • 1 cups (or about 3 large peppers) chopped green peppers
  • 1 tablespoon of beef bouillon base
  • pepper and salt to taste
  • 1  cup cooked long grain rice
  • Chopped fresh parsley, optional

Directions

  • In a Dutch oven over medium heat (or Electric Power Pressure set to sear or saute, cook and stir beef until no longer pink, breaking into crumbles; drain.
  • If using dutch oven prepare the long grain rice.
  • Move hamburger to the side of pot and gentle saute the red onion for about 3-4 minutes.  Mix together before adding the diced green peppers on top.  Be careful not to burn ingredients – put lid on pot (electric pressure cooker or Dutch Oven ) to steam the green peppers on top before mixing together.  This should take about 3-4 minutes.
  • Stir in all ingredients except parsley.  Bring to a boil if using dutch oven. Reduce heat; simmer, uncovered,  about 30 minutes.  In the Power Pressure Cooker (or Instant Pot) set to soup and follow manufacturer directions.
  • Add cooked rice; simmer, uncovered, 10 minutes longer if using dutch oven.
  • If desired, sprinkle with chopped fresh parsley.

This soup was of course inspired by ingredients I have on hand.  It just so happens I am transplanting a few new varieties of tomatoes today in the dome greenhouse.  Exciting to think of how this recipe will taste with a few of those produces.  Don’t be afraid to experiment with different peppers in your soup.  We like to use sweet peppers and even anaheim when making my traditional stuffed pepper recipe.

In this post I share a real simple and healthy recipe you’ll make more than once.  This is my cost efficient Turkey Sausage Cabbage Soup Recipe.  Find the recipe and cooking tips below. Turkey Sausage and Cabbage Soup Recipe Perhaps what I love most about this recipe is it is tasty and very good for you.  I whipped this up today before heading outside to enjoy the spring day.  It was nice to return indoors to a fragrant house and warm meal.  All of the ingredients used for this soup I keep on hand in my pantry most of the year.  Turkey Sausage is one of the best priced and easy to find meats right now at my grocery stores.  I throw a few of the bulk packages in my freezer so I can enjoy it anytime. what you will need: Turkey Sausage Olive Oil Sweet Onion Garlic Carrots Green Cabbage celery Spices (Salt, Pepper, Crushed Red Pepper Flakes) Canned Diced Tomatoes Cannellini Beans Chicken Stock My son loves things on the spicy side so I added a fresh jalapeno diced.  I grow jalapeno pretty much year-round so this is a great addition. Pin Print Turkey Sausage Cabbage Soup Recipe Recipe by Bren HaasCourse: SoupCuisine: AmericanDifficulty: EasyServings 8 servingsPrep time 7 minutesCooking time 20-25 minutes Ingredients 1 pound of ground turkey sausage 1 tablespoon of olive oil 1/2 cup of sweet onion  (diced) 2 teaspoons of garlic (minced) 1/2 cup carrot (shredded)  1 1/2 cups of diced cabbage 1/3 cup celery (diced)  salt and pepper (optional) 12 ounce can of diced tomatoes 4-5 cups of chicken stock parsley and parmesan cheese topping Directions In a stock pot brown the ground turkey sausage.  If needed, add water to prevent from going dry while cooking. Turkey sausage should be cooked to 165*F . Once meat is cooked, move to the side to sauté onions.   Move meat aside and heat up olive oil to sauté onions.  If there is ‘grease’ in the pot just use that instead of olive oil to sauté onion.  Add celery and garlic to the saute mixing well.  Cook an additional minute before adding the remaining ingredients. Slowly pour in chicken stock.  I use 4-5 cups of water and chicken bouillon.  Cook the soup for about 10 minutes at a high boil.  Be sure to stir so the ingredients do not stick to the bottom of the pan.  Add additional water if needed.  Let soup slowly simmer for about 20 minutes or unti lthe carrots and cabbage are soft..  The soup can be left in the slow cooker on low all day and enjoyed with ready for a meal.  Garnish soup with parsley and parmesan cheese if desired.  Sourdough bread goes great with this recipe.
