In today’s post, I share my easy Instant Pot Pressure Cooker Mac and Cheese Recipe. If you were to list your favorite comfort food I am very sure Mac and Cheese Recipe would be in the top five. At least in my household, it is right up there with chicken and dumplings.  

Instant Pot Pressure Cooker Mac and Cheese Recipe

Please note that just because it is made with an Instant pot or electric power pressure cooker does not mean you throw everything in and walk away!  This will be the easiest and tastiest Mac and Cheese you will ever taste.

The recipe below is for Instant Pot or Electric Pressure Cooker users.  You can skip down to the notes in the recipe to read how to use this same recipe on the stovetop.  I would encourage you to seriously consider adding a Pressure cooker to your home appliance.  Besides, we use the instant pot almost every day in my home.  Scroll down to the bottom of the page because the there is a  Mac and Cheese print recipe option!

I think this recipe is best when you use the cheese you have on hand.  Sometimes I will add a nice shredded swiss cheese or even delicious swiss gruyere.  You can’t go wrong when it comes to fresh in a Mac and Cheese recipe.

Using the Instant Pot or Pressure Cooker is so much easier because you basically measure the water and noodles, push a button and let the pasta cook. Once the flavorful noodles are cooked you just add the cheese. Oddly enough, It doesn’t get much easier than that when creating homemade Mac and Cheese.

One of my favorite veggies to pair with Mac and Cheese is home grown tomatoes! A dash of fresh ground pepper and its the perfect meal.

Naturally, I tweaked it to my taste, adding extra cheese and fresh green onions. Below are the basic ingredients needed to put this dish together. I recommend making the casserole ahead of time because it can be easily reheated for events or just to snack on during a cooler season week. Easy Homemade Chicken and Dumpling Recipe

This simple Homemade Chicken and Dumpling Recipe is sure to warm your soul and keep you smiling all year long. I modified my mother-in-law’s original recipe to make it a bit lighter, while incorporating more fresh herbs and vegetables straight from my garden. Photos From The Kitchen Bringing great memories to my kitchen today as I whip up this tasty meal.  Out to the garden to pick a few carrots, celery and parsley that are still producing in early November.   I enjoy preparing meals from scratch with a little ‘cheat’. In this recipe, I combine flour and milk to create a simple biscuit or use biscuit mix that is added to the stockpot. Carrots and celery are straightforward to cultivate and can enhance your immune system. If you are creating this recipe during the hot summer months you may want to blanch the celery you grow in your home garden to eliminate the strong, bitter taste that certain varieties may develop in warmer temperatures. Todays harvest is a new ‘Utah’ variety of celery that is super mild but full of fresh flavor.  You will find the complete recipe at the bottom of this post. Fresh Parsley Is Perfect Addition to Chicken and Dumplings A Soup Full of Goodness Dumplings Being Added to Soup The photo above featuring the dumpling is to give you an idea of what the dough looks like before adding to the soup to cook.  From The Late Season Garden  The secret to good meals with great flavor is fresh herbs.  Below I share a product review to help you keep your herbs fresh year-round.  I also recommend growing your own parsley.  This herb has got to be the easiest to grow in a greenhouse or on your kitchen counter in a growing system like Aerogarden. Fresh Picked in November Parsley Grows Year-Round in Hydroponics Today, growing vegetables and a variety of herbs year-round has become incredibly easy, even in Ohio. The harvest featured in today’s photos was gathered on November 2, directly from my raised beds. While the herbs came from my dome greenhouse, most of my culinary herbs thrive year-round in a hydroponic setup in my office. We are truly fortunate to cultivate these varieties that are often hard to find at an affordable price.  You can find out more about how I grow in my raised beds and hydroponics on my website.  Chicken and Dumpling Recipe Cick Image to Download Recipe 6-8 Servings Prep Time: 5 minutes Level: Moderate to Easy Cook Time: 20-25 minutes Ingredients: 3 pounds of cooked Chicken  1 1/2 cups of biscuit mix ( mixed with milk – dough form not baked) 5 cups of chicken broth 1/4 cup onions (diced) 1/2 cup celery (diced) 1/2 cup of carrots (slivered) 2 tablespoons of fresh parsley (chopped) Salt and Pepper (to taste) Directions: Sauté onion and celery in about 2 tablespoons of olive oil before tossing in the carrots.  Keep stirring until carrots are soft (about 5-8 minutes).  Add chopped up cooked chicken.  Rotisserie  chicken works great for this.  Stir in with the saute mix before slowly adding broth.  Let the mix come to a slow boil before adding (salt and pepper).  Carefully drop 1/4 cup size dough balls into the stock pot.  Put lid on pot and let slow boil for about 5 minutes or until the dough started to get thicker.  DO NOT STIR right away.  Serve once the dough can be gently folded into the broth mix (about 10 minutes).
