As the temperatures drop outside it is time to get cozy indoors with comfort foods. One of my family’s favorite dishes is a spin on the traditional Mac and Cheese. This Butternut Squash Mac and Cheese Recipe is easy to make and very tasty.
Butternut Squash Mac and Cheese Recipe
I love adding fresh tomatoes to my plate of mac and cheese. In this recipe, you don’t have to feel like you need to add a healthy vegetable because of the butternut squash in this bake. Be sure to print the recipe up to add to your collection. This will no doubt become a favorite to use each Autumn or when ever you get your hands on butternut squash.
Comfort Food To The Max
There never seems to be a shortage of butternut squash during the Autumn months. I have a fun time coming up with new and exciting menus to use this vegetable in. In the Butternut Squash Mac and Cheese Recipe, I use a favorite herb from the dome and a gluten-free noodle.
This pasta is super yummy and honestly, I couldn’t tell they weren’t the normal flour enriched noodles. I even found a gluten free panko.
There happen to be this gentleman at Costco today who walked past me and pointed out this Kerrygold cheese. I’m glad I took his advice and picked up a block because this was amazing melted in the pasta. If you wanted to keep the dish gluten-free you could just double up on the baked butternut squash in this recipe.
The kitchen smelt amazing before I even put this in the toast oven to cook. You can sprinkle dried thyme if you don’t have fresh to cut up to sprinkle over the veggies for baking.
The mix is ready to go into the blender to be pureed.
Just a few short pulses and the veggies will be ready to mix into the pasta and cheese.
