Air Fryer Eggplant Parmesan Recipe

Oven air frying is one of my favorite methods of preparing food.  Enjoy a healthy spin on the traditional eggplant parmesan recipe I share in today’s post.

The biggest problem I have with owning an oven air fryer is I want to prepare more recipes.  The oven air fryer cooks the food as if it were in the deep fryer only with no added fat/calories.  If you don’t have a Electric Oven Air fryer you really should consider getting one!  You can also do this same method in your oven but don’t expect it to be crunchy like in the Air fryer appliance bakes it up.  Below is my recipe for this delicious summer treat using eggplant you can grow.

Ingredients

  • 10-12 slices of eggplant ( make slices about 1/2 inch thick)
  • 1 egg beaten
  • ½ cup dried Parmesan cheese
  • 1 cup Italian-style breadcrumbs crumbled
  • Olive Oil Spray
  • 8 oz. of spaghetti sauce
  • 6 oz. pasta
  • mozzarella cheese for topping (optional)
  • basil for garnish

Instructions

  1. Wash and slice eggplant. The size and amount of eggplant depends on the variety you use. This recipe post features a skinny long purple variety of eggplant.
  2. Beat 1 egg in a bowl for dipping - sit aside.
  3. Mix the breadcrumbs and Parmesan in a bowl.
  4. Dip eggplant slice in the egg and then the breadcrumb mix - be sure to drip off excess egg before placing on oil sprayed oven air fryer rack.
  5. place the eggplant slices on rack in oven air fryer for 15 minutes at 385*F.
  6. While eggplant is air frying prepare noodles and have sauce ready to go!
  7. Once eggplant is done serve immediately on top of the noodles and sauce.

Inspired by my garden to create this recipe!

Eggplant and Herbs In the Garden

I highly recommend patio/ container eggplant varieties for this recipe.

The great thing about using a patio or container garden eggplant variety is you will not have to soak the slices in salt water to get them to tenderize.  The new varieties are perfect as is! A few patio eggplant varieties I recommend are Fairytale, Rosa Bianca, and Shooting Start.  You can find these by searching your favorite seed companies or ask me.

Below are a few of my favorite ingredients from the garden to use in this recipe.  In today’s feature, I have new basil I am trailing in my garden this summer by Proven Winner.  It is a super fragrant grower and is performing very nice in my super dry summer garden.  This variety grew lovely in my raised bed but would do great in an edible landscape. The basil was used in the pasta sauce along with garnish.

About The Basil

the first Italian sweet basil that is resistant to downy mildew, a disease that often plagues basil. And since it’s sterile, this large, vigorous plant produces a higher yield of usable, deliciously aromatic leaves. – Proven Winners

    • Sorry for confusion – the mozzarella cheese is used as topping before serving if desired. I don’t show that in this post so it is optional.
