Oven air frying is one of my favorite methods of preparing food.  Enjoy a healthy spin on the traditional eggplant parmesan recipe I share in today’s post.

Air Fryer Eggplant Parmesan Recipe

The biggest problem I have with owning an oven air fryer is I want to prepare more recipes.  The oven air fryer cooks the food as if it were in the deep fryer only with no added fat/calories.  If you don’t have a Electric Oven Air fryer you really should consider getting one!  You can also do this same method in your oven but don’t expect it to be crunchy like in the Air fryer appliance bakes it up.  Below is my recipe for this delicious summer treat using eggplant you can grow.

Eggplant and Herbs In the Garden

I highly recommend patio/ container eggplant varieties for this recipe.

The great thing about using a patio or container garden eggplant variety is you will not have to soak the slices in salt water to get them to tenderize.  The new varieties are perfect as is! A few patio eggplant varieties I recommend are Fairytale, Rosa Bianca, and Shooting Start.  You can find these by searching your favorite seed companies or ask me. 

Below are a few of my favorite ingredients from the garden to use in this recipe.  In today’s feature, I have new basil I am trailing in my garden this summer by Proven Winner.  It is a super fragrant grower and is performing very nice in my super dry summer garden.  This variety grew lovely in my raised bed but would do great in an edible landscape. The basil was used in the pasta sauce along with garnish.

Air Fryer Eggplant Parmesan Recipe

Ingredients

  • 10-12 slices of eggplant ( make each slice about 1/2 inch think)

  • 1 egg beaten

  • 1/2 cup Parmesan Cheese (grated)

  • 1 cup of Italian style breadcrumbs

  • olive oil spray

  • 8 oz. spaghetti sauce

  • 6 oz. prepared pasta

  • 1/3 cup of shredded mozzarella cheese for topping 

  • basil for garnish

Directions

  • Wash and slice eggplant.   You can slice the eggplant long or in shorter sections depending on your variety and likes.

  • Beat the egg in a bowl for wash - set aside

  • Dip eggplant slices in the egg wash before covering with breadcrumb and parmesan cheese crumbs. Spray air fryer rack with olive oil before placing eggplant on to be baked.

  • Place the eggplant slices on rack in oven air fryer for 7 minutes  at 285*F about 2-3 inches from top of unit.  Keep on on the eggplant to be sure it doesn't burn.  

    Flip the eggplant carefully and bake additional 7 minutes or until golden brown.

  • Serve eggplant on top of pasta and favorite tomato pasta sauce. Top the eggplant with a fresh shredded mozzarella cheese.

  • Serve immediately with garnish of fresh basil from the garden.
