															The biggest problem I have with owning an oven air fryer is I want to prepare more recipes. The oven air fryer cooks the food as if it were in the deep fryer only with no added fat/calories. If you don’t have a Electric Oven Air fryer you really should consider getting one! You can also do this same method in your oven but don’t expect it to be crunchy like in the Air fryer appliance bakes it up. Below is my recipe for this delicious summer treat using eggplant you can grow.

Eggplant and Herbs In the Garden
I highly recommend patio/ container eggplant varieties for this recipe.
The great thing about using a patio or container garden eggplant variety is you will not have to soak the slices in salt water to get them to tenderize. The new varieties are perfect as is! A few patio eggplant varieties I recommend are Fairytale, Rosa Bianca, and Shooting Start. You can find these by searching your favorite seed companies or ask me.
Below are a few of my favorite ingredients from the garden to use in this recipe. In today’s feature, I have new basil I am trailing in my garden this summer by Proven Winner. It is a super fragrant grower and is performing very nice in my super dry summer garden. This variety grew lovely in my raised bed but would do great in an edible landscape. The basil was used in the pasta sauce along with garnish.

You can slice the eggplant long or in shorter sections depending on your variety and likes. Parmesan Zucchini Crisps and Dip Recipe
I’m looking forward to the new year and all the fresh veggies growing in the dome and my garden. Zucchini is one of my favorite veggies to grow each year mostly because they are tasty and super easy to grow. In today’s post, I share a zesty appetizer that you could put together most any time of the year as long as you have fresh zucchini. The dip is super easy to put together as well. Check out this parmesan zucchini crisps recipe! Parmesan Zucchini Crisps and Dip Recipe This is a very simple recipe using fresh ingredients. It is best to use a right off the vine zucchini but if you don’t have one just head to the market and get the freshest you can find. The chives and lemons I grow year-round in the dome ( and you can too). Hot sauce is optional but if you had just a dash of Franks hot sauce it will add just a little zip and not too hot to taste. Be sure to have these items in your pantry. The detailed recipe in printable form is on this post. For this recipe you will need the following: sour cream buttermilk chives hot sauce salt garlic powder lemon extract Zucchini and Coating flour zucchini 2 large lemons parmesan cheese panko bread crumbs nutmeg vanilla extract garlic powder ground white pepper eggs grapeseed oil salt Zucchini Crisp and Dip Printable Recipe A few years ago I had to hide my deep fryer because my teenagers kept experimenting with anything they could get their hands on… deep-fried pickles, onions, meats, cheeses, and even strawberries. This is a recipe that you and the kids will love because it is baked and you can’t beat the main ingredient (zucchini). You can even use your Oven Air Fryer to create this parmesan zucchini crisps recipe that will leave them guessing if it was deep-fried. I’ve included both the oven and Oven Air Fryer directions on this post. Let me know if you have any questions. I have not been able to find the Nielsen-Massey Vanillas Brand locally so I purchase mine on their Amazon Stor Printable Recipe Card Parmesan Zucchini Crisps and Dip Ingredients Dip 1 cup sour cream 1/4 cup buttermilk 1 tablespoon finely chopped chives 1 1/2 teaspoons hot sauce 1/2 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon Nielsen-Massey Pure Lemon Extract (or other) Zucchini and Coating 1/2 cup all-purpose flour, divided 2 medium zucchini (about 1 pound) 2 teaspoons lemon zest (2 large lemons) 1 cup freshly grated Parmesan cheese 3/4 cup panko bread crumbs 1 1/2 teaspoons freshly grated nutmeg (preferred) 1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Powder 3/4 teaspoon organic garlic powder 1/4 teaspoon ground white pepper 3 eggs 2 tablespoons grape seed oil (or Olive Oil will do) 1/2 teaspoon kosher salt Instructions Dip (Makes about 1 cup) In a medium bowl, combine dip ingredients; cover and refrigerate until ready to serve. Zucchini If using oven heat to 400*F and line a cookie sheet with foil. For air fryer have the 2 racks ready to use. Add 1/4 cup flour to a resealable plastic bag. Slice zucchini into 1/8-inch rounds and place in bag with flour. Shake to coat and set aside. In a shallow bowl, add remaining 1/4 cup of flour and lemon zest; stir to combine. Add Parmesan, bread crumbs, nutmeg, vanilla powder, garlic powder and pepper; stir to combine. In a medium bowl, add eggs and oil; whisk to combine. Dip flour-dusted zucchini in egg mixture and lightly press each side in dry coating mix. Place zucchini on prepared sheet pan or the oven air fryer racks, sprinkle with salt and bake until golden brown, about 8-10 minutes per side. In the oven air fryer you will want the racks as low as you can from the top of the unit. Bake at 375*F for 6 minutes before switching racks position for an additional 6 minutes. Easy Mango Pineapple Chicken Wings Recipe This recipe is created in my Oven Air Fryer. You can use the same ingredients on the grill or traditional. Fresh Meat I trust a few local chicken markets including the Heritage Farm Chicken Wings ( bone-in and skin on) that I used in today’s recipe. This product was purchased at Kroger. Easy Mango Pineapple Chicken Wing Recipe Ingredients 8 large chicken wings ( about 2 1/2 pounds) 1 cup of Pineapple Mango Sauce 1/4 cup of hot sauce ( optional) Instructions Mix up about 1/2 cup of Mango Pineapple Sauce and Hot Sauce Use a brush to apply to entire piece of chicken wing Set coated chicken wings evenly on Power Air Fryer Oven wire tray Cook Chicken for about 10 minutes before flipping chicken on wire tray and reapplying sauce Cook Chicken an additional 10-15 minutes Chicken temperature should be about 165* inside Serve immediately Notes Hot sauce is optional Be sure to carefully remove the wire trays with a hot pad so you don’t burn yourself Never reuse sauce or brush that has been used on raw chicken. Wash in between each application. Use a meat thermometer for accurate food temperature. Kitchen Notes The best part about cooking it up at home is you can save money and know who handled your food. I talk about the Power Oven Air Fryer all the time because we use it in my home daily for just about every meal. I hope you will consider getting one of your own. About 5 minutes before chicken is completely cooked add the pineapple rack to the Power Air Fry Oven about 2 inches from the top for remainder of chicken cook time. Sorry for confusion – the mozzarella cheese is used as topping before serving if desired. I don’t show that in this post so it is optional.
Do both the parm and mozz go in the breadcrumbs?
The cheese goes in the bread crumbs or you can sprinkle on top of the dish when it is complete!
