Summer Fresh Herbs Rotini Salad Recipe

Herbs From My Summer Garden
One of the highlights of this recipe is cutting fresh tarragon from the dome (geodesic bio dome) herb containers. This no doubt will last in this growing space until late winter. Someday I hope to grow my own from seed but for now I will enjoy the herb purchased from a local garden center.

Summer Fresh Herbs Rotini Salad Recipe

Servings: 4-6
Cook Time: 7-10 minutes
Level: Easy
Prep Time: 5 minutes
Ingredients
- 6 oz Rotini Pasta
- 1 cups green beans, trimmed, halved
- 2 Tbsps. Dijon mustard
- 2 Tbsps. lemon juice
- 1/4 cup finely chopped parsley
- 1/4 cup fresh chives, finely chopped
- 1/4 cup fresh tarragon, finely chopped
- 1/2 tsp minced garlic
- 1/2 tsp honey
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 cup extra virgin olive oil
- 1 cup diced tomato
- 1/2 cup red onion, diced
Instructions
- Prepare pasta according to package directions. Add green beans during last 4 minutes of cooking. Run under cold water and drain well.
- Whisk mustard with lemon juice, herbs, garlic, honey, salt, and pepper; while whisking, drizzle in olive oil until well blended.
- Toss pasta and beans with dressing mixture, tomato and red onion until well combined.
Notes: Best if prepared the day of and served after at least 3 hours in refrigerator.
