Healthy and Easy to Make Tuna Salad Recipe

This is a tuna recipe I came up with while keeping it ‘CLEAN’ with my eating!  It has become a staple in my pantry to always have a few cans of good tuna and of course growing many herbs and vegetables that can be used in this recipe. Tuna Salad Recipe Below are the super simple and very clean ingredients needed to put together this tasty meal.  This is my spin on Tuna Salad using many healthy vegetables and lemon juice for flavor without mayonnaise.  Don’t get me wrong, I love MAYO but sometimes it is good to cut back and eat smart.  This recipe was originally shared on my SparksPeople page in 2004.  The photo on this post is from that old recipe share. 1 can of tuna – in water 2 hard boiled eggs diced 1/2 cup of chopped celery 1/3 cup of sweet chopped onions Romain Lettuce 1 cup of strawberries cut in half 1/3 cup of shredded carrots 1/3 cup of halved grape tomatoes (about 20 little tomatoes) salt and pepper to taste splash of lemon juice The recipe is super easy to put together and should only take about 15 minutes.  This is the perfect size for a family of 4.  I will include the detail directions and ingredients list on the printable recipe below. Evening Snow Walk in My April Garden

Don’t feel bad for the daffodils in the border of the landscape below. Those flowers were done a few days ago after a long early bloom season.  The photo below shows the new green grass peeking out of the meadow in the front.   One of my favorite trees to take photos of especially in the spring is really loving the fresh kiss of snow. The photo below is my Candymint Crabapple tree along the driveway.   It is starting to be normal to get snow in April.  Thank goodness my delicates are in the dome garden. The Tulip along the front of the porch landscape has got to be my favorite this year.  I did bring a few in the house to enjoy on the kitchen windowsill.  Me of little faith – they did much better than I thought they would have with the snow. Sharing the windowsill with cactus, lettuce starters and more spring blooms. Moving to the country made me jealous of the boys and their toys used to clean up large trees. After reviewing a few power tools in my home garden over the last few years it has come to my attention that having the right tool for the job is essential.  In this post, I will share things to consider before purchasing a chainsaw based on what helped me make my choice. Three Things To Consider Before Purchasing A Chainsaw Since 2003 I have been clearing overgrown trees, maintaining wood lines, and planting additional trees and shrub. During that time, I have relied on others who could easily complete tasks too large for me. It wasn’t until recently I found the confidence to pursue owning my own chainsaw. Before adding a chainsaw to my garden shed these were the things I considered before purchasing. Chainsaw Specs: The size and weight of the power tool. Additional expenses: fuel, oil, maintenance, blade sharping. The job: study and research the tree or shrub and if a power tool such as a chainsaw was needed. Farro Mushroom Risotto Recipe

This ancient grain has become super popular over the years because of its nutty flavor and how easy it is to prepare. There are so many good reasons to incorporate this whole grain into your diet.  In this post, I share my favorite Farro Mushroom Risotto Recipe. Farro Mushroom Risotto Recipe Risotto is a northern Italian rice dish cooked with broth until it reaches a creamy consistency. In this recipe, I use the ancient grain Farro instead of rice. It is one of the most common ways of cooking rice in Italy. Here are the ingredients you will need for this recipe:  If you can’t find shiitake mushrooms I have used morel or even baby portabella. Don’t forget my rule when it comes to the wine – only use the good stuff you would drink! You will need: butter shiitake mushrooms, cleaned, de-stemmed, and diced shallots (about ¼ cup), minced garlic, minced 1 cup Farro white wine vegetable stock parmesan cheese yogurt pine nuts fresh chives You can find the complete recipe in the printable recipe section below on this post.  I hope you reach out and tell me what you think about this recipe on the social media links below. Tips for Storing Whole Grains I can usually find Farro at ALdi and always on Amazon.  There are a few different brands I’ve used and I can always count on Bob’s Red Mill Brand. Because whole grains include the bran and germ of the grain, they must be stored a bit more carefully than their refined counterparts. Store grains covered, in a cool, dry spot out of direct sunlight for no more than 3 months for flours and meals and 6 months for intact grains. Consider keeping any grains or flours you don’t plan to use immediately in the freezer for best results.
