Once you have had one of these delicious sandwiches you won’t believe all the goodness packed in it. In this post I share my version of the spinach avocado egg sandwich recipe I originally had at a Panera Bread Store. I share how to grow your own spinach and a few tips on enjoying your own avocado tree.

Spinach, Avocado and Egg Breakfast Sandwich Recipe

For this recipe we keep it simple and clean.  No one wants to fuss over breakfast first thing in the morning.  The biggest challenge with creating this treat was finding the perfect avocado.  Luckily, over the past few months I have been able to find this new variety of Hass Avocado that is sold in bags at my grocery store for a reasonable price.  These avocados are about 1/2 the size of the regular avocado.  The texture and flavor is smooth like butter.  Below is the list of ingredients you will need.

  • 2 slices of whole oat bread (I get mine at Aldi)
  • 1 small ripe avocado
  • tomato slices
  • fried or pouch egg
  • small handful of home grown spinach
  • salt and pepper to taste

It is super easy to put this sandwich together. My spinach is harvest fresh right outside my backdoor.  I keep thinking about doing a video in the kitchen to show you just how easy it is but I am super hungry in the morning and want to eat and not make videos!  Let me know if you are interested in seeing a video of this and I’ll do my best.  NOW… on to the directions:

  1. Toast the bread slices so they are nice and crunchy.
  2. Open up the fresh avocado and spread on the toast.
  3. Layer freshly harvest spinach on the avocado followed by tomato slices.  Set aside while preparing the egg.
  4. It is easy to fry up the egg so that the egg yoke is not runny in a nonstick pan.  This takes about 3-4 minutes.  Once the egg is cooked put it on top of the spinach.
  5. Layer tomato slice on top and close up the sandwich with second toast after adding salt and pepper.

It’s just NOT summertime until we’ve made up a BLT ( Bacon Lettuce Tomato ) Sandwich.  In this post, I share some important notes on creating the best BLT ever in Tomato Sandwich 101. The Best EVER BLT Recipe This may just be the EASIEST recipe ever! I started making these when I was a kiddo just barely old enough to use a knife. Nothing like grabbing a fresh hearty tomato out of the garden and slicing it up for a BLT. Back in the day, I would toast up cheap white bread, spread some mayo on it and sloop that juicy tomato in the middle for a yummy snack. Today, we get fancy and use whole wheat bread toasted, herb blend mayonnaise, and select organic veggies. Either way, the tomato sandwich has got to be the easiest recipe every recorded. Images From The Kitchen Collection of Images to show you the process of making this amazing sandwich.  I highly recommend using precooked bacon.  I get mine from Costco.  The reason I love that bacon is that I’ve waited long enough for my tomato I don’t want to waste any time getting it on my dinner plate! Bacon hmmm… I am thinking about adding bacon to my Buffalo Chicken Dip Recipe.  Toast I HIGHLY recommend a toaster oven like this KitchenAid featured below.  It makes the BLT making process go so quickly being able to toast up so many pieces of bread. I have also used my Oven Air Fryer to toast up 2 or more sandwiches at once. Let’s Put The Sandwich Together! Beefsteak Tomato One of my favorite tomatoes to use in a BLT sandwich is the Beefsteak type tomatoes. These tomatoes are large-fruited types, producing a tomato slice that easily covers the BLT sandwich. These are usually late to ripen, so plant some standard-sized or early tomatoes if you crave a BLT early in the season. I shared more about the Beefsteak in this video featuring my raised bed garden.
