Easy Tortellini Salad Recipe
This is a filling salad you can make up and enjoy most anytime of the year. In the summer I love picking fresh cucumbers and tomatoes to use in this dish. Easy Tortellini Salad Recipe

Prepared Tortellini (flavor of your choice)
1 small head romaine lettuce, chopped
1 cup bite size tomatoes or diced up vine ripe tomato
½ cup chopped cucumber without the skin
1/4 cup of diced black olives
½ cup croutons
3 tbl. grated Parmesan cheese
½ cup Italian dressing
Directions
Cook the tortellini according to package directions. Drain and reserve.
Once pasta is cooled, combine lettuce, cooked tortellini, and vegetables.
Pour on dressing and sprinkle with cheese.
Add croutons just before serving.
This recipe is best served right away but can be stored in refrigerator for up to 2 days.
