Easy Tortellini Salad Recipe

The boys in my family were not huge fans of cold pasta until they had this recipe.  Today I share my favorite Easy Tortellini Salad Recipe that will make a pasta fan out of just about anyone.

It is always best to use what you have fresh when creating any meal.  During the late summer months, I love picking fresh herbs and veggies to use in recipes like the one on this post today.  The fresh tomatoes right off the vine are the best!  I encourage you to try growing some of your own for the Easy Tortellini Salad Recipe. Easy Tortellini Salad Recipe

This is a filling salad you can make up and enjoy most anytime of the year. In the summer I love picking fresh cucumbers and tomatoes to use in this dish.  I love creating this Easy Tortellini Salad Recipe and having it ready to go after a long day of gardening in the spring as well.  Be sure to take advantage of the printable recipe option below.  You’ll love the homemade Caesar Salad Dressing featured in this dish if you don’t like Italian dressing.

Easy Tortellini Salad Recipe

Ingredients

  • Prepared Tortellini (flavor of your choice)

  • 1 small head romaine lettuce, chopped

  • 1 cup bite size tomatoes or diced up vine ripe tomato

  • ½ cup chopped cucumber without the skin

  • 1/4 cup of diced black olives

  • ½ cup croutons

  • 3 tbl. grated Parmesan cheese

  • ½ cup Italian dressing

Directions

  • Cook the tortellini according to package directions. Drain and reserve.

  • Once pasta is cooled, combine lettuce, cooked tortellini, and vegetables.

  • Pour on dressing and sprinkle with cheese.

  • Add croutons just before serving.

  • This recipe is best served right away but can be stored in refrigerator for up to 2 days.
