Potato Salad Recipe Ingredients

One of the reasons I really love this salad is not only because it brings back childhood memories but because the ingredients. These are ingredients everyone should always have on hand. It is super simple to boil the potatoes and mix in some additional vegetables. If you have a few herbs on hand year-round don’t be afraid to add dill, parsley and even some chives to this dish. Potato Salad Herb Extras
First off please note that it just isn’t summer potato salad without some fresh herbs. Two of my favorite things to grow year-round are dill and parsley. Both grow amazing in my dome greenhouse and in the house hydroponic systems.

As I noted in this post I LOVE using fresh dill from the garden but you can also use a sweet pickle relish with dill they sell at Kroger and Walmart.
The Best Potato Salad Recipe

5-6 large gold potatoes (about 2 cups diced)
1 cup mayonnaise
1/4 cup apple cider vinegar
2 tablespoons of sugar
2 teaspoons of celery seeds
1/2 teaspoon of paprika (garnish)
1 tablespoon of fresh dill chopped
4-5 hard boiled eggs, peeled and sliced
2 celery stalks, diced small
1/3 cup of sweet onion, diced
salt and pepper to taste
Directions
Cut the potatoes into quarters and peal before placing them in a large stock pot. Fill the pot with cold water until the potatoes are submerged 1 inch. Set the pot on high heat and bring to a boil. Once boiling add 1 tablespoon of salt and cook for about 5-7 minutes or until tender with fork. DO NOT over cook or the salad will be mushy.
In a medium bowl mix the mayonnaise, vinegar, sugar and dill. Set to side
Prepare eggs and set aside. Chop onions and celery. set aside
Once the potatoes are very tender, drain off all the water. Make sure potatoes are diced into bite size pieces before adding mayonnaise mix.
Gently fold in celery and onions before adding egg slices and paprika on top. Refrigerate for up to 4 hours if needed but maybe served immediately.
- For best flavor, make potato salad with fresh dill and parsley. This can be stored in refrigerator for up to a week.

This recipe can be doubled easily to make for pot-lucks and get togethers. I love making this recipe and serving it warm because it reminds me of my German potato salad recipe.
