Brens’ Buffalo Chicken Dip Recipe
Veggies, corn chips and even bagel chips work great in this dip
There is a first for everything and I can’t help but remember the first time I had this dip. One of my sister in laws had made this for New Years Celebration. After that, I began to notice the Buffalo Chicken Dip craze move across social media. Be sure to click on my version of this recipe and print it for your kitchen notebook collection.
Buffalo Chicken Dip Recipe
2 8 oz block of cream cheese, softened
1/2 cup ranch dressing
3 tablespoons of butter
4 tablespoons of chili paste
2 cups shredded chicken
1 cup shredded cheddar cheese
1 cup of crumbled blue cheese
3 sliced green onions, optional
Heat oven to 400*F
Melt the cream cheese in a microwave safe container for 30 seconds to soften.
In small bowl melt butter - add chili paste to melted butter before adding to the cream cheese mix.
Pour the ranch dressing ion top of cream cheese mix - stir.
Fold in the blue cheese and shredded chicken.
Pour mix into a 8" x 10" oven safe dish.
Sprinkle cheddar cheese and onions on top.
Bake for 30-40 minutes or until the dip is bubbling!
Serve hot with favorite dipping veggies or corn chips
Add the shredded chicken to the slow cooker
Top with shredded cheese
Turn the slow cooker on high and heat for 1 hour or until the dip is hot. Stir occasionally to combine the ingredients as the dip heats.
Optionally, top with green onions and/or a drizzle of ranch and buffalo sauce
Serve warm with chips, crackers, or veggies

After being introduced to rotisserie chicken it is all I use in my Buffalo Chicken Dip. If you don’t have a rotisserie chicken on hand you can use canned chicken.
I got the last chicken the other day at Costco.
