The first time I remember enjoying a shredded chicken sandwich was at the local garden center where I had a job.  The sandwich was a meal, warm and easy to bring for a crowd.  In today’s post I downsize the sandwich using ingredients we always have on hand in my kitchen.   Don’t forget to take advantage of the print option available on this post so you can add this to your recipe collection.  My readers are also welcome to share on your favorite social media and Recipe Share sites just be sure to tag me ( @brenhaas )!

In the notes of this recipe, I point out that you can use the pre-cooked rotisserie chickens.  My favorites are found at Costco and Sams Club for a cheap price.  I often consider buying 2 of the chickens when I shop because they taste so good and we go through them fast in my home.   I’d love to hear some of your favorite says to serve up rotisserie chicken besides the best with potatoes and corn.

I made just enough for the 3 of us because we like to use the rotisserie chicken in other meals throughout the week.  My son of course added extreme hot sauce to his!

Shredded Chicken Sandwich Recipe

Ingredients

  • 1 1/2 cups of Shredded Chicken ( I used Rotisserie)

  • 1 small sweet onion chopped

  • 4 oz. of cream cheese

  • 1/4 cup of heavy cream

  • 1/2 cup of chicken broth

  • salt and pepper to taste

  • hamburger buns or crescents rolls 

Instructions

  • On stove top or in electric pressure cooker - sauté onion.

  • While onion is sautéing mix up cream cheese and heavy cream is a bowl on side

  • Shred chicken from breast of the rotisserie chicken - set aside

  • Once onions are sauté - slowly add the cream cheese mix - stirring making sure it is creamy

  • Add chicken to the hot pot. If too dry add chicken broth

  • Stir for about 5 minutes before putting the lid on to let simmer for about 5 additional minutes. Keep and eye on the mixture. The cream can dry up and start to burn to bottom of the pan so don't be afraid to add more chicken broth

  • Salt and pepper to taste

  • Serve hot on hamburger bun

  • I didn't have cream of chicken soup on hand so I used cream cheese mixture. If you are doing a large portion of shredded chicken I recommend using cream of chicken soup.
