The Best Chicken Pot Pie Recipe
In this post, I am using leftovers from our Thanksgiving turkey dinner but I have also used rotisserie chicken leftovers as well. Both taste very similar in this yummy and easy to create pie.
Because this is a classic recipe I recommend using the print option below and add this to your recipe book. Isn’t the cute little pie plate adorable? I use the Anchor 6″ pie plates in my Power Oven Air Fryer because they fit PERFECT! Don’t panic if you don’t have an Electric Air Fryer you can also use this recipe in the oven just account for the size of the plate. I share both options in the directions below.
Ingredients Needed:
- Chicken breast or left over turkey from Thanksgiving is perfect for this recipe.
- Rotisserie chicken is a great meat as well.
- Try this recipe without meat and add potatoes instead.
- Homemade crust is super easy but you can easily use store bought pie crust.
Chopped Onions for Saute – taste amazing in coconut oil.

If you don’t like too much dough or crust you can skip making the bottom crust of the pie and just pour in mixture.

The Best Chicken Pot Pie Recipe

1 tablespoon of olive oil
1/4 cup chopped sweet onion
1/4 cup chopped celery
2 tablespoons of flour
1 cup whole milk
1 cup peas and carrots frozen
3 small skinless, boneless chicken breast
2 cups of water
2 chicken bouillon cubes
salt and pepper to taste
2 teaspoons dried parsley
- Easy Crust
1 3/4 cups of flour
1/2 cup Crisco Butter Shortening
1 teaspoon salt
2 tablespoons of cold water
Directions
Prepare chicken breast as you like. I use my electric pressure cooker like a skillet to cook the chicken breast well. Basically, add water to the bottom of the electric pressure cooker and cook on meat setting as directed. You can also use prepared Rotisserie chicken that you have diced up into bite size pieces.
In pan sauté onion with olive oil. This takes about 2-3 minutes or until onions are translucent.
Slowly add celery to the sauté mix moving around on high heat for about 1 minutes. Add water to this mix carefully if too dry for celery and onion mix.
Move the saute mix to the side to make roux. Add milk and flour while whisking on low heat. The mix should begin to smoothen making a nice thick gravy or sort in about 2 minutes.
Add prepared chicken to the mix before stirring in the frozen peas and carrots. Cook until the mixture is bubbling but do not let burn to the bottom of the pan. IF needed add some water or milk.
Add this creamy and thick chicken pot pie mix to your favorite oven safe serving bowls.
- Crust
Prepare easy crust by mixing the flour and shortening with electric mixer on medium.
To the crust mixture add cold water slowly until it forms a dough like ball.
Remove the crust mix from the bowl to knead a few times on an extra flour workable surface. Make 6 balls that will be rolled out and used on top of the bowls you previously filled in step 7.
Roll out pie crust in the pan. Bake at 350*F for 15-20 minutes or until the crust is brown. Fill with chicken pie filling before adding the top onto the pie.
Fit the rolled out dough onto your bowl filled with chicken pot pie mixture. Pinch corners of pie crust to form a top.
Bake at 350*F for 10-15 minutes or until the top crust is golden brown. Remove from oven carefully because the gravy mix inside is SUPER HOT!!!
- When cooking in the oven air fryer be sure to put the pie on lowest rack position allowing the air to flow under the pan. This recipe can be baked in conventional oven just follow manufactures temperature and time suggestions for the appliance.
- You can also use store bought crust but making your own is super easy and taste so much better.
- Be sure the gravy or pot pie filling is a little running before baking. This is almost like a soup consistency because the liquid always absorbs into the pastry crust on top.
- EAT WITH CAUTION - important to let cool before the filling is super hot right out of the oven.

I have the original recipe from a cookbook I have and YES it’s the best and easiest to make and it tastes fabulous, my family loves it. Thank you for converting it to an air fryer recipe. I completely agree about the air fryer it’s my absolute favorite appliance and I use it on a daily basis. I also recommend a ninja one pot oven, I use the pressure cooker and then I use my air fryer and I spend a third of the time in the kitchen making dinner than I used too. Thanks again for the conversion and I will be looking out for more great conversions like this. You’ve helped me become more adventurous in the kitchen!

So even in the air fryer it would take 30 minutes to cook?
Each Electric Air Fryer is different so be sure to keep an eye on the top pie crust making sure it is turning golden brown and not burning. My new Oven Air Fryer set at 350*F with the pie on the lowest rake only took 14 minutes to get golden brown. The chicken mixture is already cooked on the stove top.

In the video the bottom crust was baked before the filling was in, should I wait for it to get cold before I put the filling in and then put the top pastry on?
How long must the bottom pastry bake and what temperature?

I have updated the recipe card but please note if you bake this in a full size oven you can add the filling to a unbaked pastry shell but bake at 375*F for about 30 minutes or until the crust is golden brown. I have also made this in the oven air fryer oven omitting the bottom crust and only using the top. I hope this clarifies my video.
