The Best Chicken Pot Pie Recipe

If you are lucky you will have some extra turkey from that fabulous Thanksgiving dinner or chicken from rotisserie dinner. In this post, I share my the best chicken pot pie prepared in an Air Fryer Oven Recipe. I’ve also included directions to create in a conventional oven.

The Best Chicken Pot Pie Recipe

In this post, I am using leftovers from our Thanksgiving turkey dinner but I have also used rotisserie chicken leftovers as well.  Both taste very similar in this yummy and easy to create pie.

Because this is a classic recipe I recommend using the print option below and add this to your recipe book.  Isn’t the cute little pie plate adorable?  I use the Anchor 6″ pie plates in my Power Oven Air Fryer because they fit PERFECT!  Don’t panic if you don’t have an Electric Air Fryer you can also use this recipe in the oven just account for the size of the plate.  I share both options in the directions below.

Ingredients Needed:

  • 2 tablespoons of butter ( or Coconut Oil )
  • 1/4 cup chopped onion
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1 1/2 cups shredded cooked turkey or chicken
  • 1 1/2 cups frozen mixed vegetables, thawed
  • 2 Prepared pie crust dough

Chopped Onions for Saute – taste amazing in coconut oil.

The Pampered Chef Roller has been my favorite for Years!  I found them on Amazon if you are interested in getting one and don’t want to deal with a Pampered Chef Consultant.

If you don’t like too much dough or crust you can skip making the bottom crust of the pie and just pour in mixture.

The Best Chicken Pot Pie Recipe

Ingredients

  • 2 tablespoons of butter ( or Coconut Oil )
  • 1/4 cup chopped onion
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1 1/2 cups shredded cooked turkey or chicken
  • 1 1/2 cups frozen mixed vegetables, thawed
  • 2 Prepared pie crust dough

Instructions

  1. In your favorite stockpot melt butter (or coconut oil) to saute onions.
  2. Slowly add milk, broth, and whisk in flour. This should make a creamy sauce - be sure to constantly whisk to prevent lumps from the flour.
  3. Stir in shredded turkey or chicken and vegetables.
  4. Add salt and pepper to taste.
  5. Gently roll out prepared pie crust or make your own from scratch.
  6. Fit crust in 2 small pie plates (5" personal size) or 1 - 9" pie plate.
  7. Prick crust with fork creating holes so the crust doesn't puff up while baking.
  8. Bake pie crust for 7 minutes at 365*F or until golden brown in Power Oven Air Fryer or Bake Pie crust at 350*F in conventional oven for 5-7 minutes or until golden brown.
  9. Remove from oven and add filling. Make sure the filling is about 1/2" from top of plate.
  10. Fit pie crust dough to the top of the pie pinching along the edge to be sure it is sealed.
  11. Separate the white from yolk of the egg.  Mix well creating an egg mixture.
  12. Cut small slices in the top of pie before brushing on egg white.
  13. Back in oven for 10 minutes at 365*F or until top is golden brown in Power Oven Air Fryer or in a conventional oven bake at 350*F for 10 minutes or until top is golden brown.
  14. Serve when done or easy to reheat later in the day.

  1. I have the original recipe from a cookbook I have and YES it’s the best and easiest to make and it tastes fabulous, my family loves it. Thank you for converting it to an air fryer recipe. I completely agree about the air fryer it’s my absolute favorite appliance and I use it on a daily basis. I also recommend a ninja one pot oven, I use the pressure cooker and then I use my air fryer and I spend a third of the time in the kitchen making dinner than I used too. Thanks again for the conversion and I will be looking out for more great conversions like this. You’ve helped me become more adventurous in the kitchen!

I’ll try to get more recipes up for you with conversions to the air fryer oven. Where do I begin… we use it daily in my home and it does make cooking faster and not to mention a speedy cleanup!

    • Thank you for bringing this to my attention. I did an edit to clarify. If you missed it the egg mixture is basically egg white whisked and brushed lightly on the top of the crust.
