Organic Red Split Lentil with Spicy Microgreens Soup Recipe
This recipe is from the back of the red split lentil package I picked up at Aldi. I’ve been a huge fan of Aldi’s for over 20 years. When I first discovered them as a new homeowner. I swear every time I went shopping at Aldi all I could think was ‘If this was only in town when I was in college …. all the money I could have saved!’. Over the years Aldi USA has really upped its game when it comes to keeping with the food trends and providing specialty items. Some of my favorites this past month have been a nice selection of organic grains and beans that I can use to make up my own soups and salad additions.
You can imagine what the house smells like after cutting up all these fresh veggies. Always be sure to use fresh veggies available for that perfect recipe. I can imagine adding some of the new colorful carrots to this dish. Have you seen the purple carrots? Those would look really pretty in this soup but I used what I had on hand. The microgreens in the soup recipe are from my window box planting. I need to start more Microgreens because I’ve been using these so often they can’t keep up with growth.
