Pecan Tassies Recipe Baking Tips
This is a recipe you will find yourself making during the holiday season. For Example, the filling is similar to that of pecan pie therefore I like to make these for Thanksgiving. It is true, I don’t always like pie so these treats are perfect! In conclusion I share with you a few tips to make this recipe easier to make even though they are simple to put together.
Allow a few hours to put these simple treats together. You will have to let the dough rest while mixing up the filling. In the past, I have made these a few weeks in advance and store in freezer. The dough got a little flaky but it saved time making so far in advance.
It is best to make the dough in a mixer. I use my large KitchenAid stand mixer for this recipe to be sure the ingredients are well mixed.

One of my all-time favorite treats during the Holiday season is any recipe with pistachios! Today I’m sharing my Chocolate Drizzle Pistachio and Cherry Cookie Recipe. When I worked at a local garden center years ago one of my favorite days was Pot Luck Friday. Everyone would bring in homemade dishes that we would share for lunch. I’m not the only one who loved that day …. the guys would always show up at the greenhouse from the barn where they were working on a tractor or from the farm field depending on how far into spring that Friday fell. A sweet friend who happens to be Italian would always bring me this yummy chocolate, pistachio and cherry candy she had put together for a treat. I wish I would have had a smartphone back then because I would’ve had a photo to share with you featuring that yummy treat wrapped in foil. I was inspired by that combination to put together the Chocolate Drizzle Pistachio and Cherry Cookie I enjoy making during the Holiday season. Chocolate Drizzle Pistachio and Cherry Cookie This is one of my favorite recipes because it reminds me of the chocolate candy my friend Darlene use to make at the greenhouse only in cookie form. The big chunks of dried cherries are so tender and moist even after baking. Pistachio is a MUST in this cookie recipe – I can’t imagine any other nut adding the same experience. Gingerbread Whoopie Pies Recipe
With cookie party season upon us I’m having a great time sharing some of our family favorites on my blog site. This Whoopie Pie recipe will give you a sugar rush while filling your home with the scent of gingerbread. What’s not to love about that?! Gingerbread Whoopie Pie Recipe I had no idea that the Whoopie Pie was a New England treat until I visited Maine. Now the Gingerbread Whoopie Pie Recipe is even more a treat. At first bite, I couldn’t figure out why so much whip in the middle of two amazing cookies. After having a traditional whoopie pie I totally get it. The gingerbread is an amazing spin on this dessert. Consider sprinkling powdered sugar on top of the treat before serving. It kind of looks like a snowfall and will fit the holiday season theme. The gingerbread freshly baked made the house smell amazing. After making these for the first time this was recipe I used time and time again. Recipe Card Gingerbread Whoopie Pies Ingredients 2 stick of butter : room temperature 1 cup light brown sugar, packed 1 large egg 1 teaspoon vanilla extract 3 cups flour 1 teaspoon ground cinnamon 2 teaspoons ground ginger 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground nutmeg 1/4 cup vegetable oil 1/3 cup molasses 1/2 cup sour cream Filling 12 tablespoons unsalted butter, room temperature 1 1/4 cups confectioners’ sugar, sifted 1 1/2 teaspoons vanilla extract pinch of salt 2 1/2 cups Marshmallow Fluff Instructions Preheat the oven to 350°F. Line a large baking sheet with parchment paper. Cream the butter and brown sugar together in a large mixing bowl until light and fluffy. Add the egg and vanilla and beat until blended. In a medium bowl, combine the flour, cinnamon, ginger, baking soda, salt, and nutmeg; set aside. In a small bowl, combine the oil, molasses, and sour cream. Alternately mix the flour mixture and molasses mixture into the creamed butter just until combined. Drop 2 tablespoons of batter about 2 inches apart on the baking sheet. Bake for 14 – 16 minutes or until they spring back when touched in the center. Cool completely on a wire rack before you add the filling. Filling Directions In a large mixing bowl, beat the butter and confectioner’s sugar on medium speed until fluffy. Add the vanilla, salt, and Marshmallow until combined. Add a rounded tablespoon of the filling on the center of the flat side of the cake-like cookie. Top with the flat side of another cookie and press together slightly. Holly Leaf You Can Eat : Holly Leaf Cookie Recipe
This is one of my favorite shrubs in the garden that I can’t grow but I can bake! In today’s post, I share a little history of the holly leaf cookie and the recipe. Holly Leaf Cookie Recipe This recipe has been in my family since I was a little girl. The first time I made this was in the late ’70s with my father. This tasty treat is a lot like the rice crispy only it uses corn flakes. Over the years it has become a challenge to find the red hot candies at the grocery store so I am sure to stock up when I find them. I hope you will use the print option on this page and make this holly leaf cookie a tradition in your home. I’ve been making this delicious low-fat treat since before I could see over the kitchen counter. I hope you will try these and make it a tradition in your home just as it has been in ours for the past few decades. Note: I usually find the red hots needed in this recipe in the ‘old people ‘ candy section. They will store forever in an airtight container. Sounds kind of gross to keep those candy treats forever but once you try them you will understand. Another trip I use when making these is to coat my hands with soft butter. That way when I am shaping the Holly Leaf Cookie the green food coloring doesn’t stick to my hands. No one wants to be the green monster ( with colored hands) for the holidays. However, as far as your lips and teeth being colored green you are on your own! Recipe Card Holly Leaf You Can Eat Ingredients 1 (16 ounce) package large marshmallows 1/2 cup butter, softened 1 1/2 teaspoons vanilla extract 1 1/2 teaspoons green food coloring 5 cups cornflakes cereal 1 package cinnamon red hot candies Instructions In the Microwave at 50% heat – melt together the marshmallows, butter, vanilla, and food coloring. Carefully mix in the 5 cups of corn flakes. Drop by spoonfuls on wax paper. Decorate with red hots. Set aside, and allow to cool.
