These Pecan Tassies are a cross between a shortbread cookie and pecan pie.  Enjoy the recipe as early as Thanksgiving because they are super yummy with dates and pecan nuts.

Pecan Tassies Recipe Baking Tips

This is a recipe you will find yourself making during the holiday season.  For Example, the filling is similar to that of pecan pie therefore I like to make these for Thanksgiving.  It is true, I don’t always like pie so these treats are perfect!  In conclusion I share with you a few tips to make this recipe easier to make even though they are simple to put together.  

Allow a few hours to put these simple treats together.  You will have to let the dough rest while mixing up the filling.   In the past, I have made these a few weeks in advance and store in freezer.  The dough got a little flaky but it saved time making so far in advance.  

It is best to make the dough in a mixer.  I use my large KitchenAid stand mixer for this recipe to be sure the ingredients are well mixed.

Snowball Cookie Recipe

In this post, I share one of my many favorite Christmas cookie recipes.   This is the snowball cookie recipe that has many different names. A printable recipe and images showing how easy it is to make in this post. Snowball Cookie Ingredients The number one thing to remember is to ground the nut you decide to use up finely.  In today’s recipe, I am using walnuts because we have many on hand.  I have also used almond and pecan in this same basic recipe.  Be sure to ONLY USE FRESH ingredients.  You will need: Flour Sugar Vanilla Extract Butter Powder Sugar Nuts Don’t forget to scroll down for the details where a print format is available vanilla extract vanilla gift pack I am using the Madagascar Bourbon Pure Vanilla Extract by Nielsen-Masse that I purchased on Amazon. Super excited to use this product in my baking this holiday season.  I LOVE IT!!!!  I give it 5 stars (highest rating) for its fresh and bold taste.  This product baked up amazing in this recipe giving the cookies an extra vanilla flavor and scent. How to Make the Snowball Cookie Step 1 – heat oven to 325*F powdered sugar cream the butter soft butter Step 2- Cream the butter and sugar in your favorite mixing bowl.  I like using my KitchenAid mixer this time of year.  Add the vanilla and beat well. Step 3- Add flour and pecans (or walnuts), mixing on low speed, scraping bowl so that it gets mixed well. pan for baking scooping cookies on parchment paper tray Step 4- Make 1-inch dough balls that will be placed 1″ apart on a baking sheet.  I like to use parchment paper on my pan. Step 5- Bake for 16-18 minutes or until lightly browned. powdered sugar snowball cookies Step 6- Cool for about 5 minutes before rolling in powdered sugar while still warm and again when cool. Easy to Make Buckeye Candy Recipe

Every year for my cookie party I love making homemade buckeye candy.  Isn’t that a given when you are from Ohio?  In this post, I share my easy recipe along with a great way to gift these to family and friends. About The Buckeye Did you know that buckeye is actually a nut from a tree you find in North America?  Growing up the neighbor had a buckeye tree that was super messy when it dropped the nuts. The buckeye is used to make various crafts, especially for those Ohio State University Fans.  The buckeye candy came on the scene in 1964 when a Virginian married an Ohioan.  Gail Lucas made these cute little peanut butter balls dipped in chocolate and her husband noted they looked like buckeyes. And there you have it… the buckeye candy was born. Buckeye Candy Recipe What I love most about this treat is no oven, stovetop, or candy thermometer, are needed to make this candy. Only 15 minutes of chilling before you can coat the creamy peanut butter centers in dark chocolate.  It is a win!!!  This is pretty much a ‘no-bake’ recipe but it does take some time.  Be sure to allow yourself an hour to prepare these.  The Buckeye Candy needs to set so you will have to let them harden before boxing up to take to event or gift. Below are the ingredients you will need.  Detailed measurements are in the printable recipe below. creamy peanut butter salted butter softened brown sugar vanilla extract powdered sugar chocolate melting bark Directions: In your favorite mixing bowl combine peanut butter, butter, and powdered sugar.  Mix until the ingredients are smooth and you are able to knead with your hands. Shape the dough mixture into tablespoon-sized balls. I like to use my old Pampered Chef cookie scooper to get the right size before rolling with my hands. Place the dough balls on a cookie sheet lined with parchment paper. Refrigerate the balls for at least 30 minutes. After the dough balls are cold, melt the chocolate bark.  Follow the directions of the package because each brand is different.  I tend to use the Aldi Brand because it taste richer to me. Remove the buckeye balls from the fridge just before the last process of melting chocolate.  You want to have everything ready to go when the chocolate is done. Use a toothpick to pick up each ball and dip it into the melted chocolate. Repeat with each ball. Use your finger to smooth over the top of each ball to remove the mark from the toothpick. after the chocolate process is completely done on each ball. No Bake Peanut Butter Chocolate Cookie Recipe

In this post, I share a super simple No-Bake Peanut Butter Chocolate Cookie Recipe you are going to love.  I am bookmarking this for my Christmas Cookie Party activities because this is a fun recipe to make with little kiddos because the hot oven is NOT involved.   You will find a printable recipe card at the bottom of this post and be sure to check out other cookie recipes on my site. No-Bake Peanut Butter Chocolate Cookie Recipe   Oh yes,  It is no-bake but a little stovetop action is required to melt down the butter.  Scroll to the Directions to see Microwave instructions if you don’t want to fire up the stove. Both ways work perfectly for this easy to create recipe you can do with kids. Ingredients: 2 cups white sugar 1/2 cup milk 1/2 cup butter 8 tablespoons unsweetened cocoa powder ( Hersey Special Dark) 1 cup crunchy peanut butter 3 cups quick-cooking oats 1 tablespoon of vanilla Directions:Line a baking sheet with wax paper or parchment.Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute.Remove from the heat.Add the oats, peanut butter, vanilla and salt, and stir to combine.Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes.Refrigerate in an airtight container.
