One of the items I almost always pick up during my Costco trip is the rotisserie chicken. There are so many different meals you can make with this $4.99 prepared poultry dish. In this post, I share my favorite nutty cranberry chicken salad recipe.

Nutty Cranberry Chicken Salad Recipe

minutesThis is the perfect salad to serve as an appetizer or small meal including fresh and easy to find ingredients.
Ingredients
2 cups prepared chicken breast - shredded
1/2 cup dried cranberries
1/4 cup silvered almonds
1/2 cup celery, diced
1/2 cup real mayonnaise
1 tablespoon apple cider vinegar
dash of sea salt
Instructions
Whisk together the mayonnaise and apple cider vinegar until smooth.
Toast silvered almonds in a dry hot skillet until light brown
Combine chicken, toasted almonds, dried cranberries and celery in a large bowl. Slowly stir in mayonnaise mixture.
Refrigerate at lest 1 hour before serving.
- This maybe served on lettuce as a meal or crackers for appetizer!
