 Brens’ Garden Fresh Rustic Meatloaf Recipe

This Garden Fresh Rustic Meatloaf Recipe taste amazing served on homemade bread or served with potatoes. be sure to use only fresh ingredients and low fat hamburger.

Rustic Meatloaf Recipe

Difficulty : Medium

6-8 Servings

 Prep Time: 10 minutes

Cook Time: 45-50 minutes

Ingredients:

  • 2 slices of bread
  • 2 tablespoons water
  • 1.5 pounds ground beef, I
    use sirloin 90/10
  • 1/2 cup of celery ( diced)
  • 1/2 cup chopped onion
  • 1/2 cup diced mushrooms
  • 1/3 cup chopped fresh
    parsley
  • 3 cloves of fresh Garlic /
    diced
  • 1 teaspoon dried basil
    dash of sea salt
  • 1/4 teaspoon black pepper
    2 large egg whites
  • Olive Oil

Directions

  1. Preheat oven to 350°
  2. Place bread in a food processor; pulse 10 times or until
    coarse breadcrumbs measure 1 1/2 cups.
  3. Combine breadcrumbs and water in a large bowl; add
    remaining ingredients except the olive oil.
  4. Shape meat mixture into a loaf shape 12 x 9-inch loaf
    on a broiler pan coated with olive oil.
  5. Make a 1/2 inch tunnel on top of the loaf and add
    favorite tomato sauce. (ketchup, salsa or marinara)
  6. Bake at 350° for 1 hour or until a thermometer
    registers 160°.
  7. Let stand for 10 minutes.
  8. Cut the loaf into 12 slices

Before starting this recipe I am sure to have a few ingredients from the garden.  Pick the herbs like parsley, thyme and garlic chive before preparing the meat.

This recipe has been my creation as long as I’ve been growing my own home garden!

* I want to note that I added Ketchup to the top of the meatloaf to please the kiddo’s in our family.  To some, it just isn’t meatloaf without the ketchup on top! You can also use salsa or Italian marinara sauce.  There are so many small tomato varieties available today that I love using my roasted tomato recipe as a topping for an Italian spin.
