Pecan Tassies Recipe Baking Tips
This is a recipe you will find yourself making during the holiday season. For Example, the filling is similar to that of pecan pie therefore I like to make these for Thanksgiving. It is true, I don’t always like pie so these treats are perfect! In conclusion I share with you a few tips to make this recipe easier to make even though they are simple to put together.
Allow a few hours to put these simple treats together. You will have to let the dough rest while mixing up the filling. In the past, I have made these a few weeks in advance and store in freezer. The dough got a little flaky but it saved time making so far in advance.
It is best to make the dough in a mixer. I use my large KitchenAid stand mixer for this recipe to be sure the ingredients are well mixed.

Baking Soda 1/2 tsp. salt 1/4 tsp. ground Cinnamon 3 C. Quick Cooking Rolled Oats 1 C. raisins 1 C. coarsely chopped walnuts Directions HEAT oven to 375ºF. Coat baking sheets with no-stick cooking spray. BEAT shortening, brown sugar, egg, milk and vanilla in large bowl at medium speed of electric mixer until well blended. COMBINE flour, baking soda, salt and cinnamon in small bowl. Beat into shortening mixture at low speed until smooth. Stir in oats, raisins and nuts. Drop by rounded tablespoonfuls 2 inches apart onto prepared baking sheets. BAKE 10 to 12 minutes or until lightly browned. Cool 2 minutes on baking sheet. Remove to wire rack to cool. CHOCOLATE OR BUTTERSCOTCH CHIP: Add 1 C. chocolate or butterscotch chips to batter. COCONUT: Add 1 C. sweetened flaked coconut. MAPLE: Add 1 1/2 tsp. maple flavoring. MAPLE WALNUT: Omit raisins. Add 1 1/2 tsp. maple flavoring to dough. Frost top of cooled cookies with mixture of Vanilla Frosting and 1 tsp. maple flavoring. Garnish with walnut halves. CHOCOLATE-DIPPED: Omit raisins and nuts. Microwave 1 C. chocolate frosting 20 to 25 seconds or until smooth and thin. Dip top half of cooled cookie in frosting. Lay on wax paper until firm. Notes Happy Spring! Jam Thumbprint Cookies Recipe Over the years I have tried different variations of this Jam Thumbprint Cookie recipe. It has come to my conclusion after many different cookie tastings (and baking) that using homemade jam is THE BEST! If you don’t have time to make your own jam with seasonal berries be sure to use a jam preserve you love to eat by itself. Kind of like the rule for using wine in your cooking: Only use what you would drink or eat on its own. In a mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined before adding the vanilla. Sift together the flour and salt in a separate bowl. With the mixer on low speed, add the flour mixture to the creamed butter and sugar until the dough starts to come together. On a floured surface, roll together into a flat ball..
