Jalapeno Cauliflower Soup Recipe

In this post, I share a flavorful and filling Jalapeno Cauliflower Soup recipe you can enjoy year-round.  Pick a day in the summer when the veggies are fresh to cook this one up.  You can even use your Electric Pressure Cooker or Instant Pot for this recipe.

The recipe you see on this post uses fresh herbs and peppers from my home garden.  I love sharing with you all how to grow your own so be sure to check out my site with details.  Cauliflower is a vegetable I am not good at growing.  In the past, I felt horrible about not being able to grow EVERYTHING successfully.  Learning over the years that frozen vegetables are actually better for my lifestyle.  Did you know that up to 31 % of the cauliflower is discarded when prepared fresh?  Of course, you can put that in the compost bin but geeze!   Frozen vegetables like Cauliflower lock in nutrients.  Preparing the vegetable in an electric pressure cooker is one of the best ways to keep the vitamins in the produce.  Preparing this way is like picking the vegetable right out of the field and bringing it directly to the table.

Jalapeno and Cauliflower Soup Recipe

This is such a creamy soup you won’t even miss the extra calories not found in the main ingredient – Cauliflower.

Jalapeno Cauliflower Soup Recipe

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 4 jalapeno peppers, seeds removed and minced
  • 1 12 oz. bag of frozen Cauliflower Florets
  • 2 cups vegetable stock
  • 2 cups Sharp Cheddar, grated
  • salt and pepper

Instructions

  1. Heat the olive oil in a large saucepan or electric pressure cooker on high heat.
  2. Add the garlic, jalapeno and onions. Cook for about 5 minutes until soft.
  3. Add the cauliflower florets and cook about 2 minutes or until the veggies are well mixed.
  4. Stir in stock, bring to the boil, then simmer for about 20 minutes until the cauliflower is tender.
  5. Using an immersion blender, blend the soup until smooth.
  6. Remove from heat and carefully stir in cheese until melted.
  7. Serve topped with croutons and paprika if desired.
