My husband and I have always been passionate about rice. I often serve it alongside fish, pork, and various other main dishes in our home. However, after finding frozen packages of riced cauliflower at our local grocery store, cutting down on carbs has never been easier! In this video, I’ll show you how I quickly prepare this delicious and satisfying Easy Riced Cauliflower Stir Fry meal.

With just a few simple ingredients, you can whip up a low-carb, delicious meal that’s both satisfying and nutritious. This recipe calls for 2 eggs, garlic, and fresh green onion added to a frozen cauliflower entrée, which you can easily find in the freezer section of your local grocery store. I’ve successfully used products from Aldi, Kroger, Meijer, and Walmart, and even noticed that Costco offers a supersized option for those who want to stock up.

Not only is this dish incredibly easy to prepare, but it also transforms basic ingredients into a flavorful, healthy meal that you’ll want to make again and again.

After about 5 minutes with the lid on the skillet move the veggie mix to one side and add 2 mixed eggs.  See the video for tips on how to quickly cook these.

Once the onions and garlic are sautéed, I incorporate a frozen bag of riced cauliflower stir-fry available in the Walmart freezer aisle.

Easy Riced Cauliflower Stir-fry Recipe

Riced Cauliflower Stir Fry Recipe

Prep Time: 5 minutes  |  Servings: 6  |  Cook Time: 10 minutes | Level: EASY

Ingredients:

  • 12 oz bag of frozen cauliflower rice (find this at Kroger, Aldi, Meijer and Walmart)
  • 2 eggs (beaten) 
  • 2 tablespoons of olive oil 
  • 1 large green onion (chopped fine)
  • 2 small cloves of garlic, minced
  • 1/2 cup of frozen peas and carrots

Directions:

  1. heat up the olive oil in your favorite stir fry pan.
  2. Saute the green onion for about 2-3 minutes before adding a dash of garlic 
  3. Add the frozen cauliflower, peas and carrots to the saute pan. put lid on for about 2 minutes on low heat. 
  4. Move the rice mixture to one side of the pan once it is heated before adding a dash of olive oil and the beaten egg.  Try not to mix in with the veggies until the egg has cooked. This takes about 2-3 minutes on medium heat.  
  5. Once egg is cooked mix with the vegetable mix in the stir fry skillet.  Add a little soy sauce and serve immediately. 

NOTE: Can be stored in an air tight container in the refrigerator for up to 2-3 days.  Use low heat to warm up leftovers.  ENJOY
