This recipe is one of my favorites especially on a cool Spring day I am working in the garden. It is so nice to walk in the house after working in the garden and smell this amazing recipe cooking away in a crock pot. I do want to note that you can use an electric pressure cooker set for ‘slow cook’ to make this meal as well.

Beef Seasoning
Before placing the Beef Roast into the Crock Pot, there are a few straightforward steps to follow. I enjoy mixing a brown gravy packet with water for the roast to simmer in. Additionally, the roast is generously coated with a dry rub made from flour and some of my favorite seasonings, which are detailed in the recipe below.
Highlights From The Kitchen
Instant Pot
This recipe is also fantastic when prepared in an Instant Pot. You can utilize the slow cook feature on this appliance. When using the Instant Pot, start by browning the roast directly in the pot before adding all the ingredients and setting it to slow cook. Ever since I got my Instant Pot, my slow cooker is rarely used for roasts anymore.
In the Crock Pot
The greatest advantage of using a slow cooker (or crock pot) is the reassurance that you can set the temperature to low or medium and trust that your meal will be ready at the designated time. Additionally, this cooking method offers a more appealing presentation when serving, especially compared to an instant pot or pressure cooker.
Fresh Ingredients
It is always best to use the best and freshest ingredients in all meals. Fresh carrots from the garden are amazing in this dish as well. I never have enough potatoes to use in a dish like this but always have on hand from grocery store or farmers market.

Slow Cooker Roast Beef Recipe
Prep Time: 10-15 minutes
Cook Time: 4-6 hours
Difficulty Level: medium
Servings 6-8
Ingredients
- 2.5 pound rump roast
- 1 cup of flour
- 1 teaspoon of ground pepper
- 2 teaspoons of salt
- 1/2 cup water
- 3 large carrots cut into big chunks
- 1 medium onion – sliced
- 2 cups of sliced fresh baby portobella mushrooms
- 3 cloves of garlic diced
Instructions
- In large skillet brown up 2 tablespoons of butter or 1 tablespoon of olive oil
- Mix flour, salt, pepper, garlic salt – carefully cover the beef roast by flipping the meat in the mix.
- After covering the beef discard the flour mix.
- Add diced onion and mushroom to the slow cooker.
- Once all sides of the roast are brown in skillet carefully put the drippings and roast into the slow cooker.
- Add 1/2 cup of beef broth to slow cooker.
- Cook the roast on High for about 4 hours before adding the carrots and potatoes to the slow cooker. You can add the vegetables with the roast if you are unable to add them 1/2 way through cooking time.
- Roast should fall apart with a fork when it is fully cooked. 2.5 roast usually takes about 6 hours to cook on high. You can also cook on medium for about 8 hours.
