Vegan Carrots, Turnips, Potatoes Creamy Cold Season Soup

One bite and you’ll be back for more.  This soup warms the soul while satisfying what your body needs.  Easy ingredients that can be grown in the home garden and prepared in no time.  The recipe below is perfect for printing and adding to your collection.  Below is the list of ingredients needed for this soup.  You can also scroll down to get the details on the printable recipe card.

For this recipe you will need the following ingredients:

  • olive oil
  •  scallion or yellow onion diced
  • garlic
  • turnip
  • carrots
  • celery
  • yellow potato
  • salt and pepper
  • Vegetable Stock
  • bay leaf

In the recipe, I use my Vitamix Blender but a submerging hand mixer works great too.   Be sure to protect yourself because the soup is really hot to touch.

I was inspired by a bag of cold-season vegetables I found during a recent visit to Whole Foods.

Below are a few of my favorite images that show how to put this cold season soup together.  It is my dream to actually be able to get a harvest of turnips during the winter season in my dome. There are many varieties on the market that do well in that growing conditions.  Let me know if you grow that vegetable and if you have any tips for a newbie.  I am sure it is easy because radishes grow similar and I have those in the dome.

Be sure to use caution when blending hot soup in this recipe.  I recommend using the Vitamix Pro Series 750 because it is easy to pour. The Vitamix also can take the place of any food processor or submerging hand mixer.
