Sweet Potato Thai Soup
In this post, I share how to whip up a tasty Thai theme soup. This super can be created in under 30 minutes if you use a pressure cooker or instant pot.
1 Tbsp peanut oil
1 small onion (chopped)
3 cloves garlic (chopped)
3 teaspoons red curry paste
2 pounds sweet potato—peeled & chopped
1 cup red lentils
5 cups chicken broth
1 cup coconut milk
2 tsp brown sugar
2 tbsp lemon juice
HEAT the oil in a large saucepan over a medium heat.
ADD the onion and cook for 5 minutes, stir.
Add the garlic and red curry paste and cook for 5 minute, stirring constantly.
Add the sweet potato, red lentils, stock, coconut milk, and brown sugar and bring to the boil.
REDUCE the heat to medium and simmer, covered, for 30 minutes.
REMOVE from the heat – cool
*Stir in the lemon juice. SERVE in bowls garnished with cilantro.
This recipe can be created in an Instant Pot / Power Pressure Cooker to cut cooking time in half.

I recently attended a really informative and inspiring spice class at Zingermans Bakery in Michigan. The class I took was all about Spices. We learned curry is basically these 6 ingredients. We were encouraged to be unique and add some of our own fresh herbs. I use the following in my soup featured on this page.

- Sweet potatoes can take anywhere from 90-170 days before harvest
- The plant has the tendency to spread if growing in sandy soil in warm conditions.
- For large harvest be sure to give the plant enough space to spread.
