Easy Caprese Salad with Dressing

It’s tomato time in my home and garden…. man I love this time of year.  I brought home a bushel from my favorite farmers stand yesterday and I hope to do some canning in the evening this Labor Day Weekend.  We’ve been blessed with amazing weather so it is super fun to play catch up out in the garden pulling out the dead plants and adding new mulch to spruce up the perennials.  With all these fun chores in mind, I was on the lookout for a healthy delicious meal to put together when I happen to rub up against my basil plant out in the raised bed area.

I couldn’t stop thinking about my trip to LA last year when I had REAL Caprese Salad at a cute Italian restaurant with my friend Mud.  Today I’m sharing the recipe I put together for lunch and I’m wishing you all were here to try this!

My friend Daniel @cityslipper suggests using fresh tomatoes from the garden… of course!!!  That is what I feature in this recipe.  If you aren’t sure how to grow your own tomatoes just let me know.

This is one of my all-time favorite recipes I can enjoy year-round.  I love adding fresh basil I grow in my home during the wintertime.  check out my post about the Aerogarden

The Right Harvest For Caprese Salad

Sweet Tower Basil

Using hydroponics and dome greenhouse technology I am able to have this salad just about year-round.  With these new tools it is easy and affordable to create the right growing conditions for most herbs and vegetables out of season.  Below are a few of my favorite tomatoes to grow and use for this recipe:

  • Think Pink Tomato
  • Purple Zebra Tomato
  • Red Racer Tomato

My absolute favorite basil to use in this recipe is a medium leaf variety called Holy Basil. I grow this variety in my hydroponic set up indoors during the winter months. 

Super Easy Garden Fresh Caprese Salad Recipe

Ingredients

  • 2-3 medium ripe tomatoes (sliced)

  • 4 oz. mozzarella cheese (sliced)

  • ¼ cup Extra Virgin Olive Oil

  • hand full of fresh basil leaves (about 1 cup ) 

  • fresh ground pepper to taste

Directions

  • Prepare fresh basil by harvesting, rinsing well and removing from branch.  Only use leaf for this recipe.

  • Arrange sliced tomatoes and cheese onto a platter.

  • Sprinkle plate with basil before drizzling with olive oil and adding ground pepper.

  • This recipe taste best with garden fresh tomatoes and basil. After adding olive oil the salad is best served right away.
