Summer Fresh Salsa Recipe

Anytime I hear the word salsa I can’t help but think of summer harvest. It’s been super exciting over the past few years of summer gardening to be able to add new vegetables from my harvest to the traditional summer salsa recipe. In this post, I share my favorite Summer Harvest Salsa!

This is one of my all-time favorites to mix up when the cilantro is fresh and ready to harvest.

Fresh is Best

Most people don’t realize you can grow a complete salsa party in your own home space.  Corn, beans, onions, and garlic are a few products that are easy to grow.  As long as the growing space has up to six hours of sun you are most likely going to succeed.  During the summer months, I love using fresh sweet corn from the farmer’s markets in my Garden Fresh Salsa Recipe.  This is just one of my many Salsas I enjoy serving up so be sure to scroll down on the post to see more.

Summer Harvest Recipe

The only requirement with making the best salsa is using the most absolute freshest ingredients. I hope you will take advantage of the print button featured in this share.

For this recipe, you will need the following ingredients

  • black beans
  • sweet corn
  • avocado
  • red onion
  • tomatoes
  • jalapeno
  • garlic
  • cilantro
  • lime juice
  • dash of salt

Mix up the Ingredients

Summer Harvest Salsa

Always a hit at summer parties especially when sweet corn is fresh and in season!

Ingredients

  • 8 oz. can of black beans / drained
  • 2 cups of fresh corn / Frozen sweet can be used but fresh is best!
  • 1 large avocados – peeled, pitted, and cubed
  • 1/2 cup of red onion, finely diced ( medium red onion)
  • 1/2 cup of fresh tomatoes diced.
  • 1 small jalapeno
  • 1 tablespoon of fresh garlic
  • * 1/4 cup chopped fresh cilantro
  • * 1/4 cup fresh lime juice
  • dash of salt

Instructions

  1. Cook up corn and slice off the cob when cooled.
  2. Place kernels in a medium bowl. Stir in avocados, red onion, tomato, beans, pepper, and garlic.
  3. Add cumin – Mix in lime juice.
  4. Season with salt if desired. Serve with your favorite tortilla chip.

 A similar recipe was shared with me by a neighbor at a 4-H event.  Over the years I’ve added my own fresh ingredient spin to the recipe.

In today’s recipe, I feature one of my favorite garlic mincers that are super easy to use and clean. It is hard to find a good garlic press that actually works.  I have gone through many in the last 20 years.  My first experience with a press during my Pampered Chef Days.

Summer Harvest Salsa with the Perfect Garlic Press

Ingredients

  • 8 oz. can of black beans  (drained)

  • 2 cups of fresh corn or frozen sweet corn mostly thawed

  • 1 large avocado (peeled, pitted and cubed)

  • 1/2 cup of redo onion  (diced)

  • 1/2 cup of fresh tomatoes (diced)

  • 1 small jalapeno (chopped)

  • 1 tablespoon of fresh garlic

  • 1/2 cup chopped fresh cilantro

  • 1/2 cup fresh lime juice

Directions

  • Cook up corn and slice off the cob if using fresh.  With frozen just rinse under cool water and set aside to drain.

  • Place corn kernels in a mixing bowl.  Slowly stir in avocados, red onions, tomatoes, beans, pepper and garlic.

  • Add cumin and mix in the lime juice.

  • Season with salt if desired.  Serve with your favorite tortilla chip.

    4. Thanks very much for that! My mother recently harvested her garden full of tomatoes before the winter really set in, and I found myself the owner of two or five buckets worth! Of course I couldnt eat them all like that, but I did find a website full of loads more tomato recipes at this site. A whole website dedicated the topic!! Crazy what you can find on the internetz nowadays!!
