I can still remember the first time I had this recipe.  The gal who brought it to the garden center event wouldn’t share the recipe!  Geeze…. thank goodness my friend Janet not only shared the recipe she shared the pie with me. Keep scrolling down to see how easy this recipe is to make.  I hope you will create it and then share it with your family and friends. Below is the printable recipe for Strawberry Pie.  It has always been one of my favorites and you’ll see why when you read on.

Ingredient List:

  • 6 c fresh strawberries
  • 3/4 cup sugar
  • 3 Tbsp cornstarch
  • 3-4 drops red food coloring (optional)
  • 1 9-inch baked pie shell

Ingredients

  • 6 cups fresh strawberries (diced)

  • 3/4 cup sugar

  • 3 tablespoons cornstarch

  • 3-4 drops red food coloring (optional)

  • 1 9 inch baking pie shell

Instructions

  • Crush 1 cup of berries.

  • Add crushed berries to 1 cup of water in a sauce pan.

  • Bring to a boil and simmer for about 2 minutes.

  • Sieve mixture reserving liquid. 

  • In the sauce pan combine sugar and cornstarch.  Stir in strawberry liquid. Bring to boil over medium heat stirring constantly. Cook until thickened and clear.

  • Remove from heat and stir in food coloring (if desired).

  • Spread about 1/4 cup glaze over the bottom and sides of baked crust.

  • Arrange 1/2 of berries, stem side down in crust.

  • Spoon 1/2 of the remaining glaze over the berries. Covering each berry. 

  • Arrange remaining berries, stem side down a top first layer. Cover each berry with remaining glaze.

  • Chill 3-4 hours before topping with whipped cream (if desired)
