Dirt to Dinner : Skillet Eggplant Recipe

If you garden and grow your own food you KNOW the joy just before lunchtime when I picked my first 2 oriental eggplants from the raised bed garden.  Hmmm…. what can I do with just a small amount of eggplants and a garden filled with herbs, garlic, and onions?  I’m skillet grilling in olive oil a yummy lunch for my daughter and me.

The Garden The Eggplant Grows In

Eggplant is super easy to grow: especially in a raised bed garden where you can keep an eye out for bugs!  The Japanese beetles have arrived and I was late to set up my Rescue traps so a few of the plants have a few nibbles but I  believe I have everything under control now. In today’s recipes I using this Burpee Home Garden  Basil. This basil would be amazing in my tomato sauce recipe.

Skillet Eggplant Recipe

Below is the recipe inspired by my garden.  The ingredients change offend depending what is in season.  Be sure to click below to take advantage of the printable option.

Skillet Egg Plant Recipe

  • 4 oz of prepared whole wheat noodles
  • 2 oriental eggplants : sliced
  • 1/2 of small red onion
  • 2 gloves of garlic
  • pepper and salt to season
  • 1/4 cup of dried seasoned bread crumbs
  • 1/2 cup of Olive Oil
  • 1/2 cup of Basil ( I used Burpee Home Gardens Ruby Frills )
  • 1/3 cup of Parsley
  • grated fresh Parmesan cheese


  1. Prepare pasta and set aside
  2. chop veggies while heating your favorite skillet with olive oil.
  3. Add onions and garlic - move around for about 1 minute before adding basil and eggplant
  4. Let saute for about 5 minutes before adding dried seasoned bread crumbs
  5. Serve on top of pasta and sprinkle with cheese and parsley.
