Roasted Golden Beets and Quinoa with Kale Recipe

Fortunately, beets are one of those veggies that are super easy to grow most any time of the year.  In this post, I share my favorite roasted golden beets and quinoa with kale recipe.

What’s Up with Beets and Herbs!

After sharing my late dinner with everyone on social media I had a few requests asking for my roasted golden beet recipe. I LOVE golden beets …. they are sweet with a hint of rustic and one of my favorite things to grow in my home garden. In today’s post, I’m excited to share my easy roasted golden beet recipe along with a side of quinoa, kale and garlic mix.

Roasted Golden Beets with Quinoa Kale and Garlic

Roasted Golden Beets with Quinoa Kale and Garlic


    For Roasted Golden Beets
  • 3 large golden beets
  • splash of olive oil
  • 1 tablespoon of dried thyme
  • 1 teaspoon of rosemary
  • dash of salt
    For the Quinoa Mix
  • 1/3 cup of quinoa
  • 1 tablespoon of olive oil
  • 1 cup of chopped kale
  • 2 cloves of garlic minced
  • Salt and pepper to taste
  • 2 tablespoon of water (substitute with chicken broth)


    For Roasted Golden Beets
  1. Set oven at 450*F
  2. Clean and slice thin 3 golden beets.
  3. Toss to coat beets with olive oil, thyme and salt.
  4. On a cast iron skillet lay slices of coated golden beets. Roast for 10-15 minutes
    For Quinoa Kale and Garlic Mix
  1. Bring 2/3 cup water (or broth) and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  2. Heat olive oil in a seasoned skillet, saute kale and garlic in the hot oil until kale is wilted, about 5 minutes. Season with salt and pepper.
  3. Stir quinoa into kale mixture, cook until flavors blend, about 5 more minutes. Add 1 tablespoon water (or chicken broth) to mixture to keep from sticking.
  4. Serve roasted beets on top.

The secret to good quinoa is to use a broth like chicken or vegetable stock for the boiling liquid.
