Fortunately, beets are one of those veggies that are super easy to grow most any time of the year. In this post, I share my favorite roasted golden beets and quinoa with kale recipe.
What’s Up with Beets and Herbs!
After sharing my late dinner with everyone on social media I had a few requests asking for my roasted golden beet recipe. I LOVE golden beets …. they are sweet with a hint of rustic and one of my favorite things to grow in my home garden. In today’s post, I’m excited to share my easy roasted golden beet recipe along with a side of quinoa, kale and garlic mix.
2 tablespoon of water (substitute with chicken broth)
For Roasted Golden Beets
Set oven at 450*F
Clean and slice thin 3 golden beets.
Toss to coat beets with olive oil, thyme and salt.
On a cast iron skillet lay slices of coated golden beets. Roast for 10-15 minutes
For Quinoa Kale and Garlic Mix
Bring 2/3 cup water (or broth) and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
Heat olive oil in a seasoned skillet, saute kale and garlic in the hot oil until kale is wilted, about 5 minutes. Season with salt and pepper.
Stir quinoa into kale mixture, cook until flavors blend, about 5 more minutes. Add 1 tablespoon water (or chicken broth) to mixture to keep from sticking.
Serve roasted beets on top.

The secret to good quinoa is to use a broth like chicken or vegetable stock for the boiling liquid.
