Quinoa Lentil Tabouli with Olive Herbed Pesto

In today’s post, I share a quick and delicious quinoa recipe—an easy, back-to-school– meal for kids and parents that works well for the dinner table or the lunchbox.  The recipe belongs to Kathie Swift, aka: “the Gut Goddess” who shares in her book four weeks of delicious meal plans, healthy recipes, and stress-reducing lifestyle to help: banish gas and bloat, improve digestion, sharpen concentration, boost energy, clear up the skin, and reduce tension and worry.

Prep time: 15 minutes | Cook time: 20 minutes | Serves: 3

Quinoa Lentil Tabouli with Olive Herbed Pesto

Ingredients

  • ½ cup fresh herbs, cleaned and loosely packed (basil, parsley, mint, cilantro, etc)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons pitted olives
  • 1 Tablespoon miso
  • 2 Tablespoons freshly squeezed lemon juice
  • 2 Tablespoons of water
  • 1/2 teaspoon of ground turmeric
  •        

Instructions

  1. Place all of the ingredients in a blended or in the bowl of a small food processor and process until smooth.
