Did you know that you can grow an actual  ‘Pickling’ Cucumber?  Cucumbers aren’t pickles until you process them of course.  In today’s post, I share one of my favorite recipes this time of year when the cucumbers are abundant in my home garden and farmers market. This recipe is super healthy and you can add a bit of a kick to it by throwing in a hot pepper from the garden as well. The really great thing about Quick and Spicy Asian Cucumber Pickles Recipe is you don’t have to wait weeks like traditional pickles to enjoy!

Quick and Spicy Asian Cucumber Pickles Recipe

Easy To Make with Home Grown Herbs

The recipe is easy because ingredients are common in most kitchen cabinets year-round.  Year-round it is super important to stock up on vinegar to quickly process many veggies like cucumbers.  Below are the basic ingredients you will need for this recipe:

  • cucumbers (pickling cucumbers are perfect)
  • white onion sliced thin
  • rice wine vinegar
  • stevia herb ( or stevia extract)
  • sesame oil
  • Thai pepper chopped
  • roasted sesame seeds optional garnish

Stevia in the Kitchen

I’m trialing a new variety of Stevia called SweetTang. Did you know stevia is totally all-natural and has ZERO calories?  In this post I basically muddle stevia with  rice vinegar instead of using sugar.  See images on this post below.

I brought this plant home with me from the Cultivate 2017 show from the awesome folks at Hort Couture.  I hope to winter this over in my geodesic dome so I can enjoy this all winter long.

Basic Grow Your Own Veggies

UPDATE: there will be more Quick and Spicy Asian Cucumber Pickles year-round because the stevia wintered over in the dome PERFECT! 

Asian Cucumber Salad Recipe

Ingredients

  • 3 cucumber sliced thin
  • 1 small white onion sliced thin
  • 1/2 cup rice wine vinegar
  • 1 teaspoon of stevia herb muddled
  • 1 teaspoon sesame oil
  • 1small thai pepper chopped
  • roasted sesame seeds optional garnish

Instructions

  1. Muddle about 1/2 cup of stevia leaves in 1/8 cup of rice vinegar / strain
  2. In a medium bowl, whisk together vinegar, stevia juice and sesame oil
  3. Add cucumbers, onions and pepper to large canning jar. Put lid on and shake well.
  4. Refrigerate for at least 30 minutes before sprinkling with roasted sesame seeds and serving.
