Pistachio Chewy Bite Smoothie

It has been a super busy week as I took on a new job, trying to keep up with the gardens after receiving a late rain and other daily chores.  I’ve made a commitment to eat better and cutting out the unnecessary foodies from my menu and adding exercise and let me tell you it can be a little frustrating.  When I come across yummy recipes like the one I’m sharing today it is a true blessing because they are packed with nutrients that can sometimes be missed when changing your diet.  This recipe not only had yummy vitamins that I need it is super easy to make which is helping me stay on track with my commitments to living healthy.  I hope you will give this recipe a try and comment below to tell me what you think!

Pistachio Chewy Bite Smoothie

When I opened my cabinet to make this recipe and didn’t see the Pistachio Chewy Bites I was ready to add my own pistachio and dates into the recipe so luckily I found a pack in the back of the cabinet.  You can easily substitute nuts and dates in this recipe but it is so much easier to use the chewy bites not to mention the 7 grams of protein, 3 grams of fiber is all measured out in the little snack.  ENJOY!!!!

Yield: 2 servings

Pistachio Chewy Bite Smoothie

Ingredients

  • 1 banana, peeled
  • 1 leaf fresh kale, stemmed and roughly chopped
  • 1/2 cup plain almond milk yogurt
  • 1 cup un-sweetened almond milk
  • 1 teaspoon fresh lemon juice
  • 4-5 ice cubes
  • 2 Pistachio Chewy Bites, roughly chopped, plus 1 for topping

Instructions

  1. In a blender, add banana, kale, yogurt, almond milk, lemon juice and ice.
  2. Add 2 Pistachio Chewy Bites to blender and blend all ingredients until smooth.
  3. Top with Pistachio Chewy Bites Crumbled
