Mother’s Day Strawberry Mango, and Coconut Mousse

If it is a healthy recipe are you willing to give it a try? This strawberry, mango and coconut mousse recipe will leave you guessing if it really is a healthy dessert.  How can something so smooth and sweet be labeled under good for you.  You’ll have to check the ingredients list and trust me on this one. One of the ingredients is tofu. I use to be hesitant about making anything at home with tofu until a few years ago I found the perfect container to store the product in making it less intimidating to use in recipes.

Mother’s Day Strawberry Mango, and Coconut Mousse

Ingredients

  • 1 (1-pound) package silken tofu
  • 1 mango, peeled, pitted, and chopped,
  • ¾ cup shredded unsweetened coconut
  • 3 tablespoons agave nectar
  • ½ teaspoon vanilla extract
  • ½ teaspoon fresh lemon juice
  • 1 cup chopped strawberries
  • 6 strawberries, sliced, for garnish

Instructions

  1. In the bowl of a food processor, combine the tofu, mango ½ cup of the coconut, the agave, vanilla, and lemon juice. Blend until smooth. Transfer to a bowl and gently stir in the chopped strawberries.
  2. Spoon the mixture into ramekins or dessert cups and chill for at least 20 minutes.
  3. To serve, garnish with the sliced strawberries and remaining ¼ cup coconut.

Summary

Most recipes I use with tofu do not call for the entire package and that is when using the product became intimidating for me. Something about this cute little container made me want to use more tofu in my menu. It makes it easier to drain the liquid that is in the tofu into the container so there is no mess on your kitchen works space..
