Jazzed Up Healthy Spin on Classic Grilled Veggie Skewers

Getting tired of burgers and brats on the grill yet?  Honestly …. NO … but if you want to cook-out again tonight and want to cut the carbs big time using up some of those fresh veggies you are growing this is THE recipe for you.  The grilling classic includes your flavor bomb tiny tomatoes, zucchini, eggplant, peppers and onions! Kick it up with this amazing garlic glaze added to the veggie loaded skewers. The Carrington Farms Garlic Flavored Liquid Coconut Cooking Oil is new to my kitchen and we love how it is all-natural, gluten-free alternative to traditional oils and butters.  I’m a HUGE fan of butter…. so you know this recipe is good if I’m recommending this today.

Grilled Skewers

Grilled Skewers


  • ½ cup Carrington Farms Garlic Flavored Liquid Coconut Cooking Oil
  • ½ cup lemon juice
  • ½ cup soy sauce
  • Pinch of salt
  • ½ cup of sliced red bell pepper
  • ½ cup sliced yellow bell peppers
  • ½ sliced red onion
  • 20 cherry tomatoes
  • ½ sliced zucchini
  • ½ sliced eggplant


  1. Place all vegetables in a large bowl. In a small bowl, mix together Carrington Farms Garlic Flavored Liquid Coconut Oil, soy sauce and lemon juice.
  2. Pour over the vegetables. Cover bowl, and marinate in the refrigerator for 30 minutes.
  3. Place vegetables on skewers (if using wooden skewers make sure to soak first).
  4. Spray grill with Carrington Farms Coconut Oil Spray. Set grill to medium heat.
  5. fPlace vegetable skewers on preheated grill. Cook for 12 to 15 minutes.
