Super easy to make Cannellini and Vegetable soup with Ditalini noodles has quickly become one of my favorite recipes.  In this post learn how to whip up this quick and healthy meal. A hearty and healthy soup that is a favorite of mine and can be made in the Pressure Cooker.  This is similar to the pasta E Fagioli recipe only using chicken broth.

It’s hard to believe this recipe comes from the back of a Kroger noodle box!  I just had to purchase these ditalini noodles and give a try. The noodle is just so darn cute!

Cannellini

First off I want to note you can find the Cannellini bean at Kroger or Aldi in the can vegetable department.  I have yet to see the bean in the dried food area or produce.

What is Cannellini? Cannellini Beans are white kidney beans, also known as “Italian white kidney beans” or “fasolia beans.” Cannellini Beans are members of the larger family of legumes, plants used for their edible seeds and pods that boast a high nutrient density with low-maintenance production and storage. They contain high levels of protein, essential minerals and fiber while maintaining a low level of fats.

Ditalini

What is Ditalini? Ditalini is a type of pasta that is shaped like small tubes. The literal translation from the Italian language to English is “small thimbles”.

This pepper that I grew this year (the long red ones).  The mystery pepper thrown in the pot tonight after picking it in the dome garden.

Roulette Pepper I also added the last of my Roulette Peppers that are sweet with a hint of habanero without the heat.  The Roulette pepper was super easy to grow and packed with over 6 ready to harvest at a time.

Because the soup needed a bite I added some fresh pepper flakes.  I buy pepper flakes in bulk that are stored in my freezer and add to this handy Ball Canning jar as needed.

Due to the fact that the pressure cooker locks in nutrients and flavor you will find yourself making the recipe over and over.  I can honestly report that we had no leftovers between my son, husband and I at dinner.
