Doctoral candidate in nutritional epidemiology, Micaela Cook Karlsen is the author of the new book A Plant-Based Life (published by AMACOM Books) that includes documentation of the astounding benefits of switching to a plant-based diet. The recipe I’m going to share today comes from this publication and I am hoping to get an interview with Micaela soon because the recipes is amazing! It’s hard to ignore all the documentation that streams the news daily about how switching to a plant base diet can change your life.
“Going plant-based doesn’t mean you have to give up meat and chicken totally, but if you make fruits and vegetables the main part of the meal and use meat to support the menu, you’ll be well on your way to switching to a mare plant-based diet,” shares Micaela Cook Karlsen
Switching to a plant-based diet can boost your health, lower blood pressure as well as lowering the risk of heart disease. Creating a meal plan primarily of plant foods will fill your body with fiber, vitamins, minerals and healthy fats. This diet plan host many needed chemicals and nutrients that the average American diet doesn’t include. Switching to a plant base diet is easy to do with friends so you can share recipes and share support. One of the recipes in Micaela’s new book is the Interstellar Lasagna which is shared below.

Why is the recipe called “interstellar Lasagna” ? The author shares that she finished perfecting this recipe the week that NASA’s Kepler Mission found a new Earth-like planet, 452b, so it was named in the honor of the discovery.

After Google searching “Insterstellar” this was one of the links that was shared. I remember watching this video in early spring and believe I may have fallen asleep 1/2 way into the movie because I remember the corn fields and everything was getting dry in the movie but I don’t remember the trip to space. This is not a reflexction on the movie because everyone knows I’m a plant geek and spring means I’m exhausted by the time I come indoors from gardening. Below is the movie clip to the Movie by Director Christopher Nolan and stars Michael Caine, Mackenzie Foy and Matthew McConaughey. I may just have to take a break from the heat tonight and watch this movie in it’s entirety.
