I think this recipe is best when you use the cheese you have on hand. Sometimes I will add a nice shredded swiss cheese or even delicious swiss gruyere. You can’t go wrong when it comes to fresh cheese.
Using the Instant Pot or Pressure Cooker is so much easier because you basically measure the water and noodles, push a button and let the pasta cook. There is no straining of water needed. Once the flavorful noodles are cooked you just add the cheese. It doesn’t get much easier than that.
One of my favorite veggies to pair with Mac&Cheese is tomatoes! A dash of fresh ground pepper and its the perfect meal.
