Last-minute Sally here once again… another fun holiday rolls around and I forget to get my seasonal ingredients.  Thank goodness for the Instant Pot AKA Power Pressure Cooker XL.  In this video, you’ll see why it is a tool for today’s family.

Instant Pot Corned Beef Dinner Ingredients

Right out of the Cooker

For this recipe you will need the following:

  • Corned beef brisket (with spice packet)
  • garlic
  • yellow onion
  • red potatoes
  • carrots
  • green cabbage
  • Peppercorn 

Super easy ingredients to find at your local grocery store.  I find these fresh at Aldi this time of year.

I use the Electric Power Pressure Cooker 6 quart size to make this meal.  You can easily do the same recipe in any Instant Pot style appliance as long as it is at least 6 or 8 quart. If you need some additional suggestions or tips reach out to me on my website.

Instant Pot Corned Beef Dinner Recipe

Ingredients

  • 3-4 pound corned beef brisket ( with spice packet)

  • 4 cups water

  • 2 cloves of garlic (minced)

  • 1 large yellow onion peeled and cut into 4 sections.

  • 6 red potatoes (quartered)

  • Carrots Cut Large (about 3 cups)

  • 1 head green cabbage cut into large wedges

Instructions

  • Place pealed onion that has been cut in 1/2 in the bottom of instant pot to prop corn beef up off bottom or pan. Add 3 cups of water.

  • Gently place corned beef brisket adding the spice packet, garlic in to the electric pressure cooker pot.

  • Cook setting should be on meat/ stew (high) for about 70 minutes.  Be sure to check proper setting for beef roast from the appliance you own.  At the end of cooking time quick release - check that meat is at recommended cooked temperature.  

  • Without discarding liquid, add potatoes, carrots and cabbage to pressure cooker on top of corned beef.  Cook at high setting for about 12 minutes.  DO NOT quick release pressure cooker for vegetables.  Let the vegetables rest for about 10 minutes before opening appliance. 

  • Serve immediately or keep meal  on warm setting until ready to serve.  ENJOY!

  • Note that this is the quick method of cooking corn beef.

This is my spin on a recipe I use to create in my slow cooker.  THANK GOODNESS for the Pressure Cooker because I can have this meal done in 1/2 the time which is handy when I forget ST. Patties Day!
