Spaghetti Squash Recipe

Over the past few months, my husband and I have been cutting high carbs like bread and pasta out of our diet.  One of my favorite meals during this time of year is pasta loaded with veggies from my garden.  In today’s post, I share a recipe that will make you think you are eating pasta.  At least I felt like I was eating pasta. The flavor of this squash in this recipe is out of this world.  You most likely have the spices used in this recipe in your kitchen.

This is the best way to cook spaghetti squash! Cut the vegetable in half, scoop out the seeds, rub a little olive oil and season on the inside, and roast in the oven. This is a super easy fuss-free way to prepare delicious spaghetti squash! Of course, I am using the Power Oven Air Fryer in this post because it is hands down the most efficient way to bake!  I’ve also included oven cooking option information for those of you who have yet to click over and buy a Power Oven Air Fryer on my Amazon link!  Take advantage of the free printable recipe option below as well.  ENJOY!

Baked Spaghetti Squash Recipe


  • 1 Spaghetti Squash
  • 1 Tablespoon of Olive Oil
  • 1 Tablespoon of fresh minced garlic
  • 1/2 teaspoon of Italian seasoning
  • dash of sea salt


  1. Cut the Spaghetti Squash in 1/2 length wise.
  2. Spoon out the seeds and mush middle of squash
  3. Lay the Spaghetti Squash face up on Oven Air Fryer rack or oven safe tray.
  4. Drizzle olive oil over the open face of squash
  5. With a spatchula rub in minced garlic
  6. sprinkle Italian Seasoning and Salt on top to cover
  7. Cook at 350*F in Oven Air Fryer for about 25 minutes or until the top is brown on lowest rack. If you using an oven place baking sheet in the preheated 400*F oven for about 30-45 minutes. Keep checking to make sure the top doesn't burn.
  8. Remove from oven and let cool before using a fork to shredded the squash

Spaghetti squash is a somewhat easy vegetable to grow during the summer months.  Spaghetti squash f fiber, beta-carotene, folate and more. It offers a really fun, spaghetti-like texture and built-in bowl shape.

Spaghetti squash is a good stand-in for pasta, and also plays nicely with a variety of other flavors. It goes particularly well with tomatoes and tomato sauce, Parmesan or other cheeses, garlic, onions, basil, bell peppers, carrots, mushrooms, thyme and vinegar (balsamic, sherry, red or white wine vinegar). Tip: to make it easier to cut just put the washed squash in the microwave for about 3-4 minutes. Let cool before cutting in 1/2.
