Over the past few months, my husband and I have been cutting high carbs like bread and pasta out of our diet. One of my favorite meals during this time of year is pasta loaded with veggies from my garden. In today’s post, I share a recipe that will make you think you are eating pasta. At least I felt like I was eating pasta. The flavor of this squash in this recipe is out of this world. You most likely have the spices used in this recipe in your kitchen.
This is the best way to cook spaghetti squash! Cut the vegetable in half, scoop out the seeds, rub a little olive oil and season on the inside, and roast in the oven. This is a super easy fuss-free way to prepare delicious spaghetti squash! Of course, I am using the Power Oven Air Fryer in this post because it is hands down the most efficient way to bake! Spaghetti squash is a somewhat easy vegetable to grow during the summer months. Spaghetti squash f fiber, beta-carotene, folate and more. It offers a really fun, spaghetti-like texture and built-in bowl shape.
Spaghetti squash is a good stand-in for pasta, and also plays nicely with a variety of other flavors. It goes particularly well with tomatoes and tomato sauce, Parmesan or other cheeses, garlic, onions, basil, bell peppers, carrots, mushrooms, thyme and vinegar (balsamic, sherry, red or white wine vinegar). Tip: to make it easier to cut just put the washed squash in the microwave for about 3-4 minutes. Let cool before cutting in 1/2.
