Everyone enjoys a light and refreshing salad during the summer time – especially when temperatures begin reaching the 80’s+. I enjoy a salad filled with unique flavors from the garden and market as long as it is fresh and packed with greens on the bottom! Salads can be deceptive due to dressings and toppings that are high in fat, calories and sodium not to mention over all boring unless you add the perfect toppings. This recipe really stood out on my emials while I searched for different dishes to create with all the tiny varieties of tomatoes I’m growing this spring and summer in the geodesic dome and container patio garden. The heart of palm really interested me because I’ve never used this vegetable before so this was a fun recipe to create and taste! This will be another favorite I’m sure I’ll be sharing when the corn is ready locally so stay tune on social media.
